I use Laughing Cow Light on everything. Haven't tried an omelet with it yet, but I think I'll give it a whirl this weekend. The stuff is amazing.

Garlic and Herb is my favorite as well. I am not really a cheese person, so I was so surprised how much I liked it the first time I tried it.

I tried melting it with a little low fat milk the other night and poured it over chicken and orzo. It was very yummy.

Okay, so this is my new favorite low cal food! I tried the Garlic and Herb low fat today and couldn't believe the yumminess in my mouth!! Thanks so much for your tip!
FYI, I tried SunSweet dried blueberries today and loved them UNTIL I saw they add High Fructose Corn syrup. Bummer, I won't be buying those again.

I love Laughing Cow Cheese on Triscuits, (especially the Fire Roasted Tomato or Rosemary flavored Triscuits). With some seedless red grapes on the side, it becomes an indulgent snack without the guilt or can be a very satisfying light lunch - Yum!

TRISH106, if you have a Costco nearby, they sell Laughing Cow in a group of four containers. That saves some money and you have a good supply.

I have also used a similar product, Sonoma Jack's, in pepper jack flavor spread on fish fillets, rolled, and baked with a little salsa on top. Equally delicious.

I love laughing cow and use it as a sandwhich spread, on english muffins, in egg scrambles and on fruit.

Hungry Girl has a great recipe that is my favorite: Fettucine Girlfredo. Microwave 1 package Shiritake Noodles for 1 minute (you can substitute cooked WW pasta but the calories will change). Add 1 wedge of the light LC cheese of you choice, 1 tsp reduced fat Parmesan cheese, 1 tsp fat free sour cream. Mix well and microwave 1 more minute. Add S&P to taste.

I'm gonna go make this for supper!

Wow! Thanks everyone for the great ideas. I will definitely be trying it as a sauce (maybe on my chicken tonight).

I also use the light version (have never tried the regular). My favorite is the garlic and herb. I bet that would be almost like an alfredo sauce if I put it over chicken or pasta.

I use Laughing Cow as a substitute for cream cheese, so on bagels, English muffins, and with celery :) It's also good on apple wedges!

If you want a cream sauce over your veggies or chicken, melt it and mix it with skim milk, spices and its wonderful

I love the Laughing Cow cheese. I always get the light versions of the different flavors when I can find it. It only has 35 calories a wedge and it is so tasty.

Put a wedge in with 3 egg whites and scramble! Makes the scrambled eggs very rich and creamy!

Laughing cow is great. One of my favorite ways to use in a recipe is:

4 oz. portion boneless skinless chicken breast, pound out to about 1/4" thickness
1 wedge Laughing Cow Swiss
1 or 2 slices extra lean deli ham
1-2 Tbsp whole wheat bread crumbs

Spread the Laughing Cow on the flattened chicken breast portion and top with the ham. Roll and secure with a toothpick. Roll in the bread crumbs and spray lightly with non-stick cooking spray. Bake in the oven at 375 for about 20-25 minutes.

My husband really loves this and he does't even care that it is lowfat/low cal.

I love Laughing Cow. I can take it with me anywhere for a quick protein that does not have to stay cold.

Laughing cow also does not have to be refrigerated - which makes it a great take along when going on a trip of any kind. Crackers and cheese really tastes great when you don't have time to stop for lunch.....

I have come to realize this is my new favorite food item. It is so versatile. This morning I used it instead of cream cheese on my English muffin. I have also used it as a spread on crackers and a dip for vegetables. I love it and love the fact that it comes already portioned out. I can just grab one and go.
