I love the spinach idea! I really, really, really love my spinach. This will be a great way for me to eat it way more often than DH will tolerate it.

I put shredded zuchinni in the batter when I make spice cake. It gives the cake a great textue and it doesnt' really alter the flavor at all. I think you could do the same with any cake, sweet bread, or muffins with good results.

Write on!

Great idea. I get extra vegies in by adding any I might have on hand to scrambled eggs or eggbeaters. I've used red and green bell peppers, onions, mushrooms, tomatoes, and spinach. The possibilities are endless.

I always keep a bag of baby spinach and add it to just about everything. If I am having pasta, or curry or any hot dish, I put the baby spinach in the bottom of the bowl and add the hot stuff on top. The heat cooks the spinach just enough and I get an extra serving of green veggies in.
