These cookies are good, but don't do like I did the last time. My church asked if I could bake something for their bake sale and said all I have is gf and she no problem. Well I went ahead and made 2 batches and when I took them out I told hubby these do not look too good. He tasted them and said not bad. Well guess what, right in front of me were the eggs and baking soda.I said "Oh NO" I forget the eggs and baking soda. I have never done this before. When mixing the dough it did not look right, well do you think that I would look at the recipe - Of course not that is too smart lol. I cannot to this day understand how they did not crumble when they came out. Hubby is still eating them. He likes them. Oh well what can I say.
Well I made another batch and these came out good. What the church did not get, I kept for myself. I guess when you check the recipe and check off all of the ingredients it will taste good.
I still laugh when I think about it.

Somewhat new to GF and was wondering about chocolate chip cookies. This looks like a "normal" recipe with the exception to the GF flours. I'm excited to try it. Thanks for the info. Have a great day!

This is a very easy recipe for GF chocolate chip cookies 2-1/4 cups gluten-free flour mix 2-1/4 tsp xanthan gum 1 tsp baking soda 1 tsp. salt
SIFT THE ABOVE INGREDIENTS
1 stick Butter Flavor Crisco (softened) 3/4 cup granulated sugar 3/4 cup packed brown sugar 1 tsp vanilla 2 large eggs 1 pkg (10 oz) Nestle chocolate chips
Preheat oven to 350 degrees F.
Set aside sifted ingredients in a small bowl. Beat Crisco, granulated sugar, brown sugar and vanilla in a large bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually mix in sifted ingredients. Stir in chocolate chips (use large mixing spoon - wooden spoon or something like this) Drop by rounded teaspoon onto ungreased baking sheet. I get at least 4 doz cookies out of this. (to mix the flavor Crisco, my sister told me about a pastry cutter to mix the Crisco into the ingredients - this can be bought at Wal-Mart and is very inexpensive)
Bake 7 minutes or until golden brown. My sister lives in Colorado and bakes them for 9 min. as she is a high altitude - 5000 ft. Otherwise, bake them 7 min.
Cool on baking sheet for one minute. Remove to wire racks to cool completely.
They come out much better if I use my hand mixer. Make sure you've not put regular bread in the brown sugar beforehand to soften it up. If you are unsure, buy a new one.
For the gf flour mix you have to mix three (3) different flours to come up with the gf flour mix. This mixture makes for 9 cups, in that way you will have more for other baking or cooking needs if it calls for gf flour mix. 6 cups white rice flour 2 cups potato starch flour 1 cup tapioca flour Mix all three ingredients (you can either use a sifter or a whisk to mix them) and put in a plastic container (mark gf flour mixture)
