I was hanging out with my family in Ohio the last two weeks. I didn't get to meal plan, but I tried to incorporate as many fruits and vegetables as possible.

Here is a recipe I found when I was challenging myself to vegetarianism. My husband loves it.

We didn't have phone/internet so couldn't get acck at end of week to answer for follow-up on meal planning and whether we were able to keep our plans. When we returned from funeral on Wedesday, I was able to keep Thurs.,Fri and Sat. plan. Sunday, I did a completely different meal, but it was still within my limits.

It is very good and very easy to make. I have made this several times. Also, I have made my planned dinners for Wednesday thru Sunday. Hope I remember to get back at the end of the week to let you know how it went.

We are going out of town for Hubby's sister's funeral on Monday. Won't be fixing any meals. I can start them for Thursday, Fri, Sat. & Sunday. I will go find my recipe from my files to post that I got on SP. Will be right back. Sorry, my computer didnn't wake up when I put it to sleep and I am using Hubby's. Will find one and get back to you.

Hey All,

Thanks for your participation last week! I loved to see it AND I love to see the active responses on the QOD's.

This week's challenge (2 parts + bonus):

1) Write down your planned menu for the week ("week can start whatever day you do your grocery shopping). You do not have to post it here BUT I do hope you document it in some way for yourself.

2) By the end of the week (or by Saturday), report how it went. Were you able to follow it? In what ways were you successful? What prevented you from doing so?

Bonus section: Post a link or to a healthy recipe you have tried and enjoy (or you know, you can type it, too)!
