Being kitchen challenged, I get broccoli slaw in bags which is basically the peeled stalks preshredded with a little carrot and maybe cabbage. I fill a small bowl with it (at least 85 grams, often more) and add chopped onion or shallot and then mix with some peanut butter or any nut/seed butter. Takes only 1 or max 2 tbsp of the latter, same as you would use in a traditional sandwich. Actually it can be used as a sandwich filling also. But it's very tasty on its own. If the seed butter is a little bitter, you can add some dried fruit. Tahini (sesame seed) works nicely because it usually is rather gloppy, but my peanut butters tend to be gloppy also.

This same approach works well with preshredded cabbage (usually sold as "coleslaw") or preshredded carrots.

I actually eat a lot of it before I add anything, though... So overflowing the bowl is fine, just eat your way down until it's suitable for mixing with the other ingredients.

There are also slices of peeled broccoli stalk sold now in refrigerated bags that are very tasty on the side, especially while I'm getting a meal together. I'll get florets sometimes, often in bags including cauliflower and carrots (mainly eat the last two separately) but I really like the peeled stalk apparently. I'll add cooked florets to rice or pasta more likely. Roasted florets are especially good, and even those can be found in the freezer section today if you're not into cooking. I even get rice or quinoa premade for microwaving nowadays... I've found I don't need as much rice or quinoa as the package says so get 3 or 4 servings out of a 2-serving bag. I just weigh out the portions in plastic bags and freeze for later. If I get ambitious enough to actually cook up some millet, I'll also freeze small portions. Now we can even buy diced/riced cauliflower, which can also make a nice base for other cooked veggies.

I don't add other raw veggies to the shredded broccoli concoction described above, though, because I prefer to eat them sliced on the side, such as seedless cucumbers or mushrooms or radishes. But there is no reason why you couldn't chop such things up and include them. Would make an even more awesome sandwich filling as well. Actually, a raw veggie sandwich (open or closed face or pita) is quite tasty by itself even without peanut/nut/seed butter. I would use a little Vegenaise myself, but not essential.

This recipe looks delicious. Do you have a substitute for the oil in the honey mustard dressing or a Fuhrman substitute?
