I wanted something vaguely Mexican to eat, so bought some supplies yesterday at the organic market. I was winging it, not exactly sure what I wanted, but it turned out great! Amounts are approximate, because I wasn't measuring anything.

1 organic, 100% whole grain tortilla
1/4 - 1/2 cup organic refried black beans (black beans, water, sea salt)
1/4 white onion, sliced
1 pat organic butter (can substitute your favorite cooking oil, or use no oil at all)
1/2 organic Hass avocado, cut into slices
1 tbsp hulled organic hemp seeds

Lightly saute onions and remove from pan.

Heat refried beans in pan.

Lay out tortilla flat on plate. Spread beans in center, add avocado slices, sauteed onions, and hemp seeds. Roll up and enjoy!

I prefer mild foods, but spices or herbs can be added if you prefer more flavor. Other optional additions might include lettuce, tomato, salsa, etc.

p.s. I had intended to sprinkle an organic Mexican cheese mix on top, but forgot. It didn't need it at all, which is really great, because I'm trying to cut down on my cheese intake, and am eating very little of it anymore. I even forgot to add the optional cheese here to the recipe. My mind is taking good care of me!!!
