Makes 3.5 1 c servings. I like it for breakfast, but you can eat it at any time of the day.

Ingredients:
1 block of firm tofu
1/2 c chopped green pepper
1/2 c chopped yellow onion
1 tsp minced garlic
1 tsp salt
1/2 tsp poultry seasoning (I substitute Vegeta)
1/2 tsp tumeric
1/4 tsp black pepper

Smash the tofu, salt, poultry seasoning, tumeric, and black pepper together in a large bowl. I use a potato masher. Make sure it gets scrambled very well. (Note: I don't press the water out of the tofu first, but you can and it will save time in the cooking stage).

Use some non-stick cooking spray in a non-stick skillet to sautee the green pepper, onion, and garlic until they're soft. Add the tofu mixture.

Cook on high until slightly brown throughout. This could take about 10 minutes. If you pressed the water out of the tofu this will take around 7-8 minutes. Cook as necessary to achieve the desired texture. I cook mine until slightly firm.

Enjoy! I pour on the Tabasco sauce. :)
