i lost this thread also. unfortunately this time of the year is hard for me to get what i need in veggies and fruits. some days i do better than others and some days i forget what i did eat in veggies. maybe i can try and keep up with this, but highly unlikely due to how busy i will be and hubby not liking me on the computer and him knowing what i should be doing and...

Ugh! Just 'lost' my post ... so here we go again! Tuesday 10/11:

kale, onion, garlic, carrot, mushroom, eggplant, chickpea (part of stir fry/breakfast)
sliced tomato
orange
banana
carrot, green bell pepper, red bell pepper, green chili pepper, garlic, onion (part of recipe/dinner)

Every day I have juice I add to tea, homemade salad dressing and/or in desserts ... the juice usually is equivalent of one serving of the fruit. Today: lemon and pomegranate

You have a wonderful garden going! I think I let mine 'lapse' into decline a bit while tending to other things too much ... but I think I tend to do that when I know I can 'garden' year round. I hope to give more attention to my garden in September and redoing it/expanding it to fit my current needs more.

i met my quota and beyond today.

the garden has been supplying us with wonderful veggies.
i love to take a zucchini squash and chop it and saute it in a skillet along with chopped onion, green pepper, some frozen spinach or what ever i decide to throw in with the squash. well, today that is what was in my squash lunch and i have enough for lunch another day. i also threw in some crumbled bacon and after i put in on my plate i grated some asiago cheese on top of it. MMMMMmmmmmm!!!!!

i picked some leaf type lettuce i have growing in a big container that i started from seeds and i am thinning out the container. i made a large serving bowl with this lettuce for supper along with some sliced cucumber from the garden and some thin sliced sweet onion from the store. i did a few other extras and then i topped it with my homemade raspberry balsamic vinaigrette. i also had a baked sweet potato and a hamburger (no bun) with this salad for supper.

i know i will hate to see summer end because there will be no more fresh veggies fro the garden

Same here ... only you have been very busy ... I have no reason or excuse.

I try to look at my body as my friend ... when it's being painful it's 'talking' to me ... sometimes I am not a very good listener or I out and out ignore this friend. Not very nice of me! That's when my friend gets hurt and/or angry and strikes back ... then we're at war! Need to keep things peaceful and in harmony ... best of friends! Taking care of each other...

I've my fruit servings for today met. I'm going to have pickles on my bbq pork sandwich at dinner and there are veggies in my beef curry for lunch. I probably should include some sort of vegetable as a snack later. Maybe a big salad with tuna for a snack.

Sue, I'm so sorry you have suffered with Chron's Disease for so long and had to have surgery, etc.

I wrote a response ... but it was soooooooo long ... it covers being vegan and auto-immune diseases (including severe colitis, Chron's, arthritis, etc. etc.) ... gave some links if one wants to pursue info ... anyway, I decided to put it in a new topic in the General Discussion Forum ...titled "Can Choosing Foods Differently Alleviate Diseases?" ...figured others might be interested for one reason or other and might see it there lieu of here.

Glad to here that you are doing much better ... better than most!

SO - today my veggies/fruits:

(been busy today - too hot - not much appetite - again and REALLY don't want to cook ... trying to come up with 'cold' stuff for dinner)

DJ...my problem with lots of fresh fruits and veggies is that i have crohns disease and that is a colon thing. i also had 2/3 rds of my large intestine removed several years due to the crohns. doing much better and i eat more things and get away with them than most people do that i know with crohns or colitis. it's just my way of life for over 40 years now.

LOL! I will say since eating this way (vegan) I've NOT had a problem with regularity whatsoever. On the other hand, when I go 'off plan' is when I get in trouble now ... gets me every time! I guess it's just what our bodies get 'used to' ...

DJ....just read your list on what you ate in veggies and fruits and i had to laugh because if i ate that much in veggies and fruits i would be tooting (if you know what i mean) for 3 days and be miserable with the gas...

(and the rest was stuff I do not normally eat ... and should not have had/not on my 'vegan' plan by any means ... it 'happens' from time to time)

Appetite is back ... it's rare I have a lack of appetite - ha! It rained yesterday and is drying out, sunny today - too hot to cook though!

So far today:

papaya

cabbage salad - with green cabbage, purple cabbage, carrots, cucumber, tomato, onions, kale, chickpeas

Hmmmm... that's it so far - feels like I've eaten more...

DJ...i know about not being hungry when it is hot and humid. i usually want something cold to eat. i do like to eat a salad on those days. try and stay cool and remember drink plenty of cold water.

The heat and humidity is really killing my appetite!
