I agree - Try Kale it's wonderful.

For the Kale chips - Do a quick search on the internet and you'll come up with all sorts of recipes. Some people put nutritional yeast on them and dehydrate them (raw) or bake at a super low temperature. You can even throw olive oil and a little salt on them and either cook in the oven or in a pan. In a pan it gets a little crispy but sort of wilted. Super good!

Have you gone to the Kind Diet website? I haven't been on a lot - but it seems pretty active - and you might find more suggestions there.

If you found something you like, like the Sicilian Collards, why not just make a big batch to have for breakfast for the week?

I'm also a big fan of kale chips.

My problem is...I hate greens. I never was a big veggie-loving vegetarian before The Kind Diet, and I'm trying to be now. I'd been forcing down spinach every day with breakfast, but it turns out that that is not what Alicia means by "greens". I experimented with collards a little, but they're so hard to tenderize, I have to cook them to death, which I am sure takes away from nutritional value. The Sicilian Collards w/ Pine Nuts recipe isn't bad, but I don't have time to cook those to eat with breakfast. I bought some turnip, mustard, and more collard greens at the store yesterday, and am really going to try. Does anyone have any recipes or tips they'd care to pass along? (PLEASE!)
