I also used grilled chicken thighs to do a healthier version of General Tso's chicken. I get the Iron Chef sauce (which is high in sodium, but only an occasional indulgence), and grill the chicken thighs, then cube them and toss them in sauce over steamed broccoli and brown rice. Its a decent enough alternative to the fried version. At least you get the flavors.

Thanks- love the sound of the fish! We're HUGE fish eaters and that sounds great. And ironically, I just bought my first ever package of boneless, skinless chicken thighs- never used anything but breasts before- and was trying to think of something to do with them. So I think we may try the bar b q idea tonight- maybe stuff the shredded chicken in some baked potatoes... stuffed baked potatoes are my weakness when it comes to bar b q :)

Elizabeth, I am not sure if you are much of a fish eater, but I made a tasty fish dish for dinner tonight. I had some frozen Talapia filets (2) and I but them in a baking dish and made a sauce with:
juice from 1 lime
1 tbsp fresh cilantro, chopped
1/2 tsp chopped garlic
pepper to taste
2 small chunks of pineapple, chopped fine
1/2 tsp olive oil

I spooned it over the talapia and put it in a 350 oven for about 15 minutes.

I served it with some brown rice, green beans and some low calorie broccoli slaw I made with helmans low fat mayo, rice vinegar, a bit of splenda and some italian seasoning.


Not sure if you like barbecue - like pulled pork. I love it, but the pork shoulder can be quite fatty. Last night I grilled some boneless skinless chicken thighs and today I shredded the chicken and made bbq with it. Its a nice lower calorie and fat version of bbq.

I will post up some others as I think of them.

I'm looking for a few new recipes to add to my repertoire and hoped some of you could help. Anyone have any recipes that they come back to time and time again? I'd love some new ones for vegetables as well. That's been something that I have had to work to increase since being with SparkPeople. I'm not a huge fan of veggies so if you struggle with the same but have found some good ways to get them down, I'd love to hear them!
