My personal opinion is that if you are hitting your minimums at least 4-5 days a week, then don't worry about trying to make up the days you are short. Its the average over time that really matters. Having said that, you can easily add in some calories and good fats with a handful of nuts or a bit of peanut butter/almond butter on an apple. Just a small serving of those would probably put you in your range if you needed a snack in the evening.

I often find that at the end of the day, I am struggling to meet my calorie goals and particularly some of my nutritional goals. So the dilemma is... do I go under on the days that I don't make my range by dinner or do I try and add pretty hefty sized snacks at the end of the day to make up for some calories and nutritional deficits (I have a particularly hard time getting in enough fat) ?! Thought I would see what everyone advised....
