Love carrots............ Al Dente....do not overcook.... emoticon
Some foods such as carrots have a high glycemic index but a low glycemic load. Thus, carrots raise blood sugar quickly, but contain relatively few carbohydrates.

I like carrots but for some reason eating them too often will give me GERD. I really like them roasted with olive oil infused with a little bit of garlic.

Try cooked carrots with rosemary and just a touch of real butter. YUMMY!! Also cooked carrots are better for your tummy than raw.
