I actually watched it for the first time from start to finish a couple of weeks ago. I don't think I will have the patience to watch it again. There are a lot of shows like that now, that can be done in less than half an hour but they stretch it out into an hour or more for the 'drama' of it.

As it was the only one I'd watched, I wondered at their eating habits. I saw bowls of fresh fruit and veggies around, but in the show I watched, no one actually ate anything or made any food. Do they eat healthy things, show the audience new healthy recipes at all?

I agree that the goal of double digit weight loss in one week is ridiculous and sets people up for failure. There is no way that that is a healthy weight loss.
