Had tomatoes, onions, lettuce and pickles on a burger. Snacked on Cottage cheese with pineapple and for breakfast had raisin bran with flax seed. emoticon

I use the V8 juices when I can't get to fresh veggies. I love fresh fruit and try to keep it in the house for snacking.

My DH makes HOMEMADE SOUPS ~this week's is POTATO CHEESE !
He has made a veggie soup, lentil soup ,chicken noodle soup, tomato basil soup, and turkey pot pie or he'll substitute chicken with all the fixings you see here ~ emoticon emoticon emoticon emoticon !!

I like to start the day with fruit on my oatmeal or cereal. emoticon emoticon Then,veggies added to whatever I have for lunch ,usually a sandwich. emoticon
And more veggies at dinner. emoticon emoticon emoticon
Snacks include fruit or if I am baking cookies~my downfall! ~I try to put some in! Right now I am eating chewy apple oatmeal cookies and I get my fiber in,too! emoticon emoticon What's on the menu?!

I am in the habit of making Green drinks almost daily ......... great for lots of veggies, and fruits but to bolster my calcium intake too ............(I add grapefruit juice--a dab) which offsets the veggie flavor ............ and add some fresh ginger. ..... emoticon

As a new vegan all i do is experiment with foods and loving it.
Homemade soups using fresh pumpkins or squash
Butternut squash w/nutmeg and or cinnamon baked faced down in microwave has become a new favorite.....better than sweetpotato
*Juiced Carrot, apple, fresh ginger, is great.
*Fresh oranges and grape fruits is quite refreshing.
*Or smoothies for any meal: cooled sweet potato w/ frozen bananna, 8 oz. almond milk and pumpkin pie spice blended....ummmn
*Loving the chew of mini carrots in the afternoon
*Microwave homemade potato chips, white or sweet
*Baked brussel sprouts in garlic sprayed and baked in oven.
*Turnips diced, seasoned w/garlic, mrs dash, blk pepper, olive oil spray. Or long sliced carrots done same way.
*Cauliflower anything
*Microwaved corn on the cob.
Homemade bread mixed w/ zucchini or fresh spinanch, onions and mrs dash
*Homemade icecream just add 2 frozen banannas and your favorite fruits.
When I gave up meat, I hit a gold mine.

Thanks to Sparkpeople this has become a daily habit that starts with breakfast, prunes, fresh fruit in Greek yogurt and ends with a huge fresh salad for either lunch or dinner... in-between I snack on fruit (banana, grapes, cuties) If I'm lacking fresh freggies it's a glass of Naked Green Machine or dried fruit and nuts. I get at least 5 some times 7 servings a day emoticon emoticon

I have discovered a green veggie drink by V8 juice that is to die for. They have a new line of veggie and fruit juices that my Doctor recommends. I also love the purple power made with beets.

I make green drinks which are loaded with fruits and vegetables and all kinds of antioxidants....... and I usually have a big green salad every day..... Plus we love to fix roasted vegetables. emoticon emoticon

I love fruit so don't usually have any problem getting enough of that. I often have some berries on cereal for breakfast, and snack on grapes or other fruit throughout the day. Veggies are harder for me - I try to have a salad with spinach or field greens a few times a week, at least 1 veggie with supper, and as many others have already mentioned, V-8 juice.

There's a difference between interest and commitment. When you're interested in doing something, you do it only when it's convenient. When you're committed to something, you accept no excuses; only results.
When you get to a plateau, think of it as a landing on the stairway to your goal. And
maintenance is a lifelong plateau, so a bit of "rehearsal" for maintenance isn't the worst thing in the world

I don't seem to have a problem - I average 7 servings a day. Snacks and three meals a day does it. I too like V8 juice, but the low sodium one.

I try to cook up enough veggies to have leftovers I can use for several days. Right now I've got a big skillet of broccoli, cauliflower and sundried tomatoes stir-frying in a bit of olive oil. Fruits are never a problem. They're good on their own or mixed with plain Greek yogurt, stevia and vanilla.

If I find myself falling short of my daily serving on veggies, I have myself a quick glass of V-8 juice. I love the new varieties that they have come out with as well. I find my self sipping on a glass of V-8 instead of regular snacking now, it is so much more satisfying. emoticon
