When I need protein and low fat, I use Jif peanut powder. I reconstitute it and usually use it as a dip.

I sprayed them with Pam-type oil. Maybe not enough oil? Or maybe the recipe I used had a lower temperature (375) and longer time in the oven. It's been a couple of days and they haven't lost any of their crunch ... hard as those little leftover popcorn pieces.

The trick is to make sure the chickpeas are rinsed and DRIED before adding the olive oil. Not sure why yours were so hard.

I made a batch of crunchy chickpeas ... but they ended up being as hard as unpopped popcorn kernels. How long do you roast them and at what temperature?

Are you vegan? If so then yes I'd second the roasted chickpea snack idea.

I am a mere vegetarian so I basically live on egg whites and nonfat plain greek yogurt. Clearly not vegan-friendly, but it works for me. I, too, seriously struggle with getting all my protein without fat.

I'd simply cut back on oil or eliminate it. You can saute with water or veggie broth.

All plant foods have protein. Beans and lentils are one of the best sources.

Beans have 12-14 gms protein per 1c cooked and lentils 18 gms per 1c cooked.

DIY snack: drain a can of chick peas and oven roast them with some spices. Allow to cool and store in a jar. Low fat, high protein snack.

I cook from scratch a lot, and make seitan. I found vital wheat gluten in the health food aisle of my local grocery. If you're not sensitive to gluten, give that a try since it has a lot of protein. Also, nutritional yeast has 6g of protein per 2 Tbsp. I add it to my chili and soups, on top of pasta sauce and even on my salads.

Vegan mushroom jerky is pretty low in fat and high in protein, as compared to almonds as a snack.

I always need like 2 more grams of protein, but somehow I'm always maxed out on fat (usually from cooking with olive oil). I would love to snack on almonds to get my protein up, but I just can't sacrifice my fat goal to make my protein goal.

Any advice?
