I know Bob's Red Mill has grits and would think it would be organic and non GMO.

Walking, Vegetarian, Meditation, Yoga, Reiki, Chakras, Crystals and fun of course... Just a few of the things I'm interested in. It takes time to balance it all but it can be done.

Hey J, The grits recipe sounds great! I haven't had grits for years.

Nassau Grits - Yep, I'm from the south. I guess you could sub polenta. It's just grits, canned tomatoes, small can chili peppers, onion and garlic powder, salt to taste. My mom used to put cheese in it but it is just as good without it. I cup dry grits to 4 cups water.

Walking, Vegetarian, Meditation, Yoga, Reiki, Chakras, Crystals and fun of course... Just a few of the things I'm interested in. It takes time to balance it all but it can be done.

I made the following recipe last night. I didn't have coconut water so I used all almond milk. It turned out really good. I topped it with dried cranberries and pumpkin seeds. Delicious!

Thanks, Fustercluck....often saute mushrooms for omlets, but like your idea of combining them with spinach and tomatoes and having them on bagels or toast.

Overnight Oatmeal
1 C oatmeal (not instant)
1 T chia seeds
1 T ground flax seed
1/4 tsp cinnamon
1/4 tsp vanilla extract
1/4 C fruit eg. raisins, currants, cranberries etc.
12/3 C unsweetened almond milk (or your favorite)
Mix together in a covered container and let sit overnight in the fridge. I sprinkle a little bit of raw sugar on top before eating it.

Vegan-wise, I like steel cut oats (with cinnamon, raisins and cocounut milk), tofu scramble (with whatever I have available-mushrooms, onions, peppers, spinach, zucchini, etc.). Even non-veg husband loves it.

One of my favorite breakfasts is sautéed mushrooms (any kind, but I like the brown button ones best) with whatever fresh herbs I happen to have at the time. It's great on hummus toast, or on a bagel with spinach and tomatoes.

I'm a big Freelee The Banana Girl follower. So, I am a BIG supporter of 5-10 banana smoothies for breakfast, but while I'm waiting for those puppies to ripen up I tend to go to McDonald's and get a Strawberry Banana smoothie with no yogurt.

I LOVE vegemite! It's a great broth base for soups, and is delicious on toast with baked beans! It also makes a great gravy base-- saute with some mushrooms and onions, then blend in a food processor-- soooooo good on mashed potatoes!

I've never tried Vegemite. I've had Marmite and it's okay in sandwiches and as an addition to gravy or soups.

They're both vegan though, as far as I know.

Scrambled tofu. Basically just tofu with veggies and spices (if you want it to be yellow like scrambled eggs, just add tumeric) all mixed in together. Some potatoes go well on the side as well.

I have done the chia pudding (not bad but I prefer to add more fruit than the chia pudding) and I have had salads for brekky. I do love smoothies and have done the odd protein drink but the focus of the program is to consume fresh foods. I could easily just do fruit, and have done so, but we are only allowed two fruits a day (due to sugar content). Oh, and I have also done soups as well.

And hummus eaten with a spoon from a bowl. ;) Oh yes, and whatever you had for lunch and dinner the previous day that you liked. Doesn't sound too bad at all. I should add that I am currently on a 30 Day clean and cannot do grains, dairy, sugar. Actually, anything that tastes good :)

One my go-to breakfasts is chia pudding. Mix some chia seeds with your favourite nutmilk, let is sit for 10 minutes until it thickens, fold in some fruit and sweetener if you like and your ready to go. Easy, filling, no cooking :-)

emoticon I like hot or cold cereals with fruit &/or nuts and sometimes a sweetener like maple syrup. brown sugar, or regular sugar. Raisins can be used as a sweetener, too. The fruits I usually use are bananas and all sorts of berries. My favorite nuts on cereal are almonds and hazel nuts but I also use pecans and walnuts sometimes. I also eat toast or bagels with nut butters. Peanut butter & banana sandwiches are good for breakfast or lunch. Fruit smoothies are good also. There are lots of smoothie recipe books on the market or at the library that you can check out and online also.
