Like most foods. If you buy it, it is higher in sodium and chemicals. If you make it yourself you have control and it is closer to whole food.

I like eating veg meat...but I'm finding they are high sodium and other stuff

I tried a small piece of seitan and was very glad I didn't eat more. I had no idea that I was intolerant. I only knew that eating wheat in the evenings gave me heartburn. If you don't have any problems with wheat, then you should be fine eating it.

Remember, nobody can go back to the very beginning and make a brand new start, but anyone can start here and make a brand new end.

I make delicious ham seitan, sausages, and hot dogs from it. It is high in protein and unless you are intolerant it is very good for you. High in minerals too.

Whenver I see recipes calling for wheat gluten my brain deems it as "that can't be good for you" I don't know why. Maybe it's the gluten free hype? LOL

anyhow I know the edgy veg uses it all the time so now I'm curious.
