It seems to me portobellos have a meatier flavor than s*** kes but I've used lentils to make meatloaf before and it was pretty good. I seem to recall the Engine 2 cookbook has a meat pie in the recipes.

I use seitan. You can buy it, or it's really easy to make yourself.

ground dried porcini/porcino mushrooms are the type that i have seen on a few different cooking shows to add a meaty flavor. (both vegan and carnivore chefs)

Lots of good suggestions! Great... mushrooms, lentils... yeah! This is going to be a great dish.

IMVEGAN: Agree, try to avoid soy... at least if it's not organic... but perhaps they put a lot of rubbish on that too...?

- mushrooms & walnuts minced
- green jackfruit. If you live a long way from tropics you can find it canned.
- gluten chunks. Can make your own and chop them up.
Use a heavy gravy for lots of umami.

Btw. Please rethink soy mince... we call it TVP here. It is highly processed with hexane gas to extract the protein from the whole bean then dried.. so scary to eat hexane.

It is so funny that spark won't let me tell you that I use sh*takke mushrooms for a vmeaty mouth feel and taste and took away a long post I just wrote. You have to soak the dried mushrooms first but they are delicious. They told me "No profanity please"

You can get meat substitutes that are made from peas. You can also try lentils cooked with ground up mushrooms (i don't remember the type) that give dishes a meaty flavor

I'm cooking a "meat" pie for a vegan. Now, i'm a vegetarian, and usually substitute with quorn or soy mince. Now, this person does not eat soy, and quorn has eggwhite in it.
What can i substitute the meat with? I know i can just swap it for veggies, but t should still "feel" like meat. Any ideas?
