Hi I forgot to mention that I didn't use the sautéed mushrooms ( I only like them stuffed) and I didn't use the fresh basil!

Woohoo! I'm glad you tried it and it went well! Yes I forgot to mention salt and pepper to taste. Some people like it saltier than others. I prefer adding salt to individual plates so those who need to watch their salt or prefer less sodium can manage it. Also depending on the veggie broth or bullion you use, that can add a lot of salt.

Hi everyone! I used 1 large cauliflower, 1/2 tsp salt (needs more though), 1/4 cup sautéed chopped onion (I didn't have onion powder), 4 large sautéed chopped garlic cloves (needed more), 1 tbsp. EVOO, 1 1/2 tsp dried Italian seasoning and 1/2 cup veggie bullion. I also used high fiber rotini instead of fettuccine cuz that's all I had. Now the directions didn't say how much salt and pepper cuz she didn't add any to her blender so I guessed on the salt (and will later add more) and I left out the pepper cuz I just don't like pepper. Then I followed the directions April gave and there you go!

It tasted very similar to a mild alfredo sauce! It was very good! I will be making this again soon and making the changes I mentioned.

Happy Tuesday my fellow Veggie Peeps!

Thank you to everyone that checked out my first cooking vlog! The response has been really incredibly positive. A couple friends have even shared it with their facebook friends. I feel so special. So thank you! If anyone tries the recipe, please let me know how it goes! I think I will try to post more cooking vlogs because it was so fun and there seems to be a need for simple healthy cooking help. I'm excited about contributing to more people eating more veggies and vegetarian meals!

I just want to encourage everyone that if something isn't working or you're struggling, TODAY is a great day to try something new and/or get back on track. There's no need to wait till next week or next month or next year. You can turn things around right now, in this moment. As Jillian says, transformation is not a future event, it is a present activity. You can choose to transform today!

Hi April:

I watched the video and found it informative. I want to include cauliflower in my diet for its nutritional benefits but don't have much experience with it. I'll try your recipe this weekend and let you know how it goes.

I'm going to try your yummy sounding recipe tomorrow, April! I'm doing my Whole Foods shopping tomorrow morning and I'll pick up some cauliflower while I'm there. Your vlog was fun to watch cuz your enthusiasm is contagious!

Hello my fellow Veggie Spark Peeps! I just posted my first cooking vlog, telling the world about my fav magical veggie recipe. Let me know what you think!
