I mix black beans w a can of mexicorn, a can of diced green chilis, some cumin, garlic, cilantro, garlic powder, onions and pepper. I cook it on the stove or in the microwave and let it sit and get all the flavors going. Add some with rice and it makes a great taco filling or a chip dip. : )

I assume you are trying to stay away from the processed "fake" meats, but I do really like Gimme Lean "beef. It comes in a tube and has great texture. Add a little taco seasoning and my carnivore husband loves it.

Otherwise, I lean toward black beans or tempeh for tacos (as others have said). I cook them and season like I would taco meat.

I like to use tempeh (lightly fried then seasoned and water added to disperse the seasonings more) or Morning Star Farms (or Boca) crumbles. But I usually add beans &/or rice for more substance and filler.

I can't rave enough about using lentils as taco filling. If the lentils are not pureed, they have the same mouth feel as ground beef, but without the grease, and of course, without the meat. I got the recipe from a book called Vegan Before 6 (VB6), but there are other recipes on the web, such as http://www.tasteofhome.com/recipes/tasty-l
entil-tacos. Just make sure that the recipe has cumin, which makes the taste pop!

I really like The Happy Herbivore too. In a pinch, I have found that mushrooms ground up in the food processor works well. Just sprinkle in chili powder, garlic, pepper, and cumin, and a pinch of salt. Stir fry with a quick spray of olive oil and voila!

But often, for tacos, we just use beans and rice, lettuce, tomato, seasonings, and I like a splash of lemon juice and sriracha. For taco soup we just use more beans, along with peppers, tomatoes, corn, seasonings. And I like to sprinkle nutritional yeast on top of my bowl and mix it in to get a creamier consistency.

Hey, Tina! My favorite vegan taco meat recipe is from a walnut + mushroom base--it's super tasty. If you want to cut down on the fat from the walnuts, adding extra mushrooms and/or tossing in a cup of lentils would help with that.

I stopped eating TVP because it is processed with hexane gas. (If you google, "How is TVP made?" you can find out how that happens.) I like using flavored black beans or tempeh or cooked bulgur for filling for tacos or burritos.

Tempeh, steamed and then shredded and then seasoned with taco seasoning and cumin is great.

I like to cook bulgur in no beef broth for 20 minutes, then use it like crumbled beef. (1 cup bulgur to 2 cups broth.) Then I add taco seasoning.

I like to cook black beans with peppers and onions and add adobo seasoning and cumin and use that in tacos and burritos.
