My daily standby is a gigantic salad for lunch. I throw in whatever sounds good or I have on hand. Usually start with shredded romaine then add cucumber, tomato, olives, dried fruit, nuts, canned veggies like beans, always olive oil and usually a whole wheat product. With Winter right around the corner I am sure I will be changing from my daily salad to a bowl of soup.

Do not have the exact recipe but I read of an interesting gumbo that included canned tomatoes, sweet potato cubes, okra of course and cannelini beans plus onion, garlic and seasonings. Think I will make that this weekend to kick off Fall!

I drink 2 1.5liters of water a day or more
today I ate 2 slices whole grain wheat bread w/butter
vegtable stirfry made with
1 green bell pepper
2 tbsp garlic
3 stalks celery
2 small carrots
4 large mushrooms
2-3 tbsp olive oil
1/2 block firm tofu
2 green onions
2 medium vine-ripe tomatoes
and sprinkled with a bit of feta cheese
I eat it in small portions through out the day
that is today tommorrow is another day
Oh I forgot today I had a slimfast chocolate shake.

cup of berries (strawberries, blueberries)
cheerios
soy milk
spiru-tein
almond milk
veggie burger
squash
zucchini
soy ice cream or rice milk chocolate
olive oil (on veggies, about 1 tsp)
pb&j sandwhich on whole wheat bread
soy yogurt

I eat a lot of other things thrown in there, but that's probably what I'll end up eating today.

Sometimes I make salads, veggie sloppy joe, vegan pizza, pasta with veggies, mashed potatoes, toasted uncheese, or a pita wrap of some sort. I also love beans and eat a lot of them, especially lima beans.

You would be truly surprised at how much protien your dark, green, leafy veggies have. The darker the color, the higher the content. Somewhere online I found a chart that explains it, I'll see if I can find it for you.

Yes, I do get enough protein. Between the peanut butter, the beans, the spinach, and the veggie burger, I do fine.

I won't have much today, but in addition to the peanut butter, on most days I eat nuts and sunflower seeds or pumpkin seeds too. So I get plenty of protein.

Here is my diet today:

Breakfast:
Bowl of strawberries
Oatmeal
Rye toast w/ natural peanut butter
Green tea

Mid morning snack:
1/2 cup of popcorn
Apple

Lunch:
Veggie burger
Mixed veggies
Brown rice

Snack:
Peanuts
Kashi granola bar

Dinner:
Black beans and rice
Spinach
Garden salad (romaine lettuce, tomatoes, shredded carrots, olives, slices of avocados, cucumbers) w/ balsamic vinaigrette dressing

Evening snack:
Apple sauce
Ginger snaps

Water and green tea are what I tend to drink. Seldom drink anything else.

There are so many amazing foods! I'm discovering that a vegan diet is ridiculously low in fat, and higher in protein than my meat eating diet was. I'm interested to see what a daily diet looks like for some of you vegans, so I can get ideas on how to balance my intake and consumption of proteins.
