My favorite quick but delicious recipe is actually one that my mom picked up while doing weight watchers. It's a spicy black bean soup and it is delicious and VERY filling and good for you.

Step 1: Add one can of drained black beans to a blender/food processor, then fill the can with vegetable broth and dump that in as well. Blend and pour into pot.

Step 2: Add a second can of drained black beans to the blender/food processor along with one can of Rotel (diced tomatoes with chilis). Blend and pour into pot.

Step 3: Add one UNdrained can of black beans and one can of drained corn kernels to the pot.

Step 4: Cook on medium, stirring frequently, until the soup begins to simmer and voila, a thick, hearty, spicy soup that will really fill you up without weighing you down. I love to top this with a dab of sour cream serve it with a hunk of rustic whole-gran bread.

I am big on using my slow cooker, it seems like one of the best inventions of all time! Especially when I am stuck in the lab super late, I get home and still need to get in a workout before bed - having din already made is one less thing I need to squeeze in, and its a really healthy meal.

I always forget that I have a slowcooker. What a great idea, and with those liners you can buy to go insider the cooker you minimize the amount of messy cleanup afterwards.

Do Lean Cuisines count as cooking? emoticon I think I'm pretty dependent on frozen meals, especially from Trader Joe's.

I've also gotten better about cooking in my crock pot. I prep before I go to bed, and start cooking when I leave for school. A warm meal is waiting for me when I come home. Making soup is also a quick fix for me.

I have some easy meals on days when I don't want to cook much, like pasta with sauce from the jar (not ideal, but fast!) and quesadillas. My slow cooker is a life saver, 10 minutes of prep in the morning and it's ready to go by night. Recently though I barely have time for THAT, in which case hummus and pita plus fruit and veggies is my go to fast, easy lunch.

When I do eat out, there are some good ethnic restaurants around here which aren't exactly health food, but their food at least is not very processed. I find one order of tofu curry from the Thai place down the street actually lasts about 3 meals so it's not very expensive. The place on campus also has really good grilled salmon with a side salad and fruit cup.

On Sunday night (or whenever I have an hour at home) I bake 6-8 pieces of chicken. Then if I'm really in a rush I can microwave chicken and canned green beans in a hurry! Sometimes I steam a bunch of veggies in advance too, that way I just warm it all up at once. It's been helping!

When I am going from an internship to school with no time to go home, I've started to hit the local grocery store salad bar. I pile on the veggies and they have cubed turkey, then I use light dressing.. not too heavy, definitely healthier than fast food or the starbucks cold-case, and it gets me through!

I ate so much pizza and burgers and whatever last semester that I decided I had enough. When I'm too busy I pop in an Amy's frozen dinner -- a healthier option. I choose some of the ones that are higher protein options. It seems to be working. Also, I'll cook things out of a jar. Like jarred Indian sauces with tofu tossed with veggies. I started to really like vegetarian meals, as they are lighter and seem to agree with the study schedule more.

My first semester of grad I found that I was eating out WAY too much (Burger King never looked so enticing) because I simply had no time to cook. Then, during the last month before final papers I picked up the La Choy's Chow Mein (chicken and beef) and started keeping them in my cabinet. They only take a few minutes to make in the frying pan (no oil or fat needed), they have plenty of vegetables, I add an extra can of bean sprouts and a package of Uncle Ben's Jasmine Ready Rice which microwaves in 90 sec. I can let it sit in the frying pan all day (my house is kept cool) and just dip out of it and reheat when I need a break from studying and have to eat. The food feeds me for a day and has somewhere around 975 cal total for the whole pan (when you throw in Chow Mein noodles)for what amounts to a lot of study food.

What do you do on days when you are over your head in work and are tempted to go the fast food route so you don't waste time cooking?
