I eat a lot of Lean Cuisines, bagels, and leftovers for lunch. I usually pair them with an apple and yogurt.

First Trimester:

I take my lunch to work and usually I pack a can of soup (they now have those handy ones you don't even ened a spoon for) and lots of fruits and veggies. I usually have to put my softer fruit (nectarines and peaches) in a plastic container to get it safely to work.

When I have time and the inclination, I do up a vegetable stir fry (zucchini, eggplant, a little olive oil sauteed in fresh garlic). It fills and keeps me full.

I love sandwiches. I know I am a dork, but I really do. I like putting roasted red bell peppers on some, chutney on others etc etc.

I also am a big fan of the lean cuisine frozen pizzas.

One of the other things that I do is take left overs. I am assuming that you have access to a microwave, but it seems a reasonable assumption. I would make a meal the night before and before I even sit down I plate the food for my girlfriend and I as well as the two carry-in tuperware containers. That way everyone is impressed with my meals the next day. I was actually considered a lean cuisine commercial one day! I always get asked what I am eating because it smells so good! Chicken with shallots and rosemary, greenbeans, and a tiny baked potato, or leftover greek turkey burgers sans the bun (just take 99% fat free ground turkey and throw in some fat free feta, fresh chopped spinach, egg/egg substitute, and a few T seasoned breadcrumbs - mix it up and throw it on the grill). I also like to make flafel out of a box and bring small pitas (i don't "fry" the flafel, rather i make flat patties instead of balls in order to brown them in minimal oil/pam).

Hi JE_SUIS. For a while there I LOVED making the spark people recipe for Sweet Potato and Black Bean Burrito
il.asp?recipe=56397 I'd make a GIANT batch of them on the weekend (like 20-40 burritos), and individually wrap them in foil. Then it's quick to pack lunch in the morning. Now I often enjoy getting frozen entrees (there's lots of healthy ones out there), and again I get hot food in the middle of the day, and very quick packing in the morning.

Hey everyone! Thanks so much for the warm welcomes :) Here's another question for ya'll...what are some of your fave meals to bring to class with you (if you do so)? I have a lunchbox, and class ALL DAY a couple days a week, plus an internship...and I don't want to be eating junk food (or spending money, for that matter) every day. I get bored with sandwiches and such pretty quick, so I'm just looking for some of your fave ideas/recipes! :D
