This silky preserve toes the line between sweet and savory: Try it on toast with cream cheese, in whipped cream, or melted into a mixture of sage and brown butter for an autumnal pasta sauce.

Pumpkin Butter
1 (3-pound) sugar pumpkin, stemmed, halved lengthwise, and seeded
1 tablespoon vegetable oil
1/4 cup water
1 sugar-free apple cider drink packet (powdered drink, individually packaged)
1/3 cup light brown sugar substitute
3 tablespoons honey
1 teaspoon apple cider vinegar
3/4 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon kosher salt
1/4 teaspoon grated fresh nutmeg
Pinch of ground cloves
Step 1
Preheat oven to 350F. Brush cut sides of pumpkin halves with oil. Arrange pumpkin halves, cut side down, on a large rimmed baking sheet lined with parchment paper. Bake in preheated oven until very tender when pierced with a fork, about 50 minutes. Remove from oven, and let cool slightly, about 10 minutes.

Step 2
Scoop flesh from cooled pumpkin; transfer to bowl of a food processor. Discard pumpkin shell. Add apple cider packet plus 1/4 c water; process until smooth, about 1 minute, stopping to scrape down sides of bowl as needed. Add brown sugar, honey, vinegar, cinnamon, ginger, salt, nutmeg, and cloves; process until smooth, about 20 seconds, stopping to scrape down sides as needed.

Step 3
Transfer pumpkin mixture to a saucepan; bring to a simmer over medium, stirring occasionally. Reduce heat to low; cook, stirring occasionally with a rubber spatula to ensure bottom of saucepan does not scorch and sides of saucepan stay clean, until mixture is reduced by one-third and turns slightly darker in color, about 25 minutes. Remove from heat; let cool to room temperature, about 30 minutes.

Make Ahead
Store Pumpkin Butter in an airtight container in the refrigerator for 2 to 3 weeks.

Had a yummy, veggie-filled, salad for lunch and a quick fix but OH so nutritious eggs with sauteed spinach and cheese for dinner. Fabulous day--and it met all of my RDA, macros, & other eating goals for the day.

Baked a whole chicken in roaster pan with cut veggies - roasted nicely simple lovely dinner for three and good left overs.


Walking good with one cane even though some pain - determined to keep mobile!!

Got in 3000 steps even if I had to use two canes to do it! thankful for some mobility but frightened at how fast it is declining. Good food choices and even bought MULLBERRIES at the market for this week!!

VERY GOOD FOR YOU !!! scrubb the floors??? it has been soo long since I did that! running Swiffer is as close as I come. I used to get down on hands and knees and really clean!

But I did track food and stayed in limits. Rested on schedule and did get my steps in - need to do the stationary bike this evening.

This is "yesterday" not today--today's activity will come later on this afternoon. Yesterday I attended many of the presentations in the Kego Edge Summit. I didn't intentionally pick speakers who were chatting about IF, but that's how it turned out--I went to the lectures of interest and BOOM every one of them were actually speaking while in the fasting stage of their current fast(s). Ironic!

Anyway, the biggest "take away" point I heard from the 5 or so speakers I listened to was everything you are doing for your health is about achieving the equivalent to a PhD in you. They went on to explain that each of us is unique.

One of the chemists who was explaining what is happening inside of your body when you fast and eat lower carb said he ran into a health issue whereby he got a nasty infection. It just wouldn't go away. Now that flies in the face of his personal wisdom as he was already eating low carb (no added sugars) and doing up to 3 day fasts as well as IF inbetween. He thought, what else can I do? So he examined his diet and found the 3 blackberries he put in his morning smoothy. So he eliminated them. Boom! The incurable infection cleared up. He was discussing how this is not logical. No one out there "thinks" 3 blackberries, well without the daily carb count/macros is going to hurt anyone--but his body didn't like it--with those 3 very healthy berries included in his diet, his body wasn't as healthy as it was without them. Thus, earning the PhD in your own body's reaction to things.

As some one who has food allergies I find this so encouraging!!! So when something doesn't go as well as planned--I'm just earning my PhD! No worries. A whole lot less stressful to picture it that way! Hurray!

A second take away--the military started the research into this WOL to cure an issue their deep sea divers were experiencing. As a result, researchers have determined this WOL is protective of the brain and the brain's functioning (as long as you are consuming healthy-for-you fats).

Told depression to leave me alone and pushed through needed paperwork and to the village to make bank deposits and paid bills - Got in 4000steps and good food intake. Planning good weekend keto foods with low saturated fats.

4/24 Stretched the Intermittent Fasting window to 6pm to 10am for 16 hours yeah!!! Sorting out differences between hungry and NEED to eat...different feelings!!!

"Good for me" is making good food choices free style without weighing, or checking calories, fats or carbs - just working on things I have learned through the week of good food choices and wise portion control. I maintain mobility with purposely climbing stairs at church and walking up and down every aisle at local groc store and good nap in afternoon.

Good for me today - increased activity and continuing to get things put away from trip and shopping. Did a load of laundry and rested.

Tomorrow - April 21 is our fortieth wedding anniversary - will visit the wedding site on the home ranch that now belongs to my youngest brother and the bush and wedding site still a natural amphitheater with same "wedding bush". Then a drive up through the local mountains looking at the spring flowers blooming and possibly visit friends. Taking a picnic lunch with us.

How fun to "go shopping in your own closet" good for you!!!

For me today - I tapered down the intake and tomorrow will be back fully to my dietary plan and looking forward to it!!! I also took a nap - I always need to recupe a few days after being away and stressed in food, sleep and even the fun times - Fibromyalgia is a cruel master and I must take good care of me or longer pain time.

Other really good thing I did for me was a long call to younger sister that is fighting breast cancer - we are rebuilding good relationship through this hard time for her and the call was tiring for her but she was pleased that I called and told her about my trip.

This morning I went shopping in the skinny part of my closet - a 'new' pair of pants which are in the process of being shortened - StitchWitch for the win!! (despite them being petite I still have to hem them, grrr) and another pair of pants which I bought at least 5 years ago that were goal pants - FIT. emoticon
Wedding dresses arrived - waists are quite small but seem to fit everywhere else - going to arrange a seamstress but will try to delay the alterations until mid-May, especially if I keep being the incredible shrinking woman. I never thought as a 44 year old lady that I'd ever shift this weight. woohoo!!!

This is a great looking thread!

Today, I (we) are going to get outside and clean out the bedding from the previous group of hens to make way for the new batch. Our 49 Rhode Island Red pullets are 5 weeks old now and are getting crowded in their brooder.
Dusty and dirty job but will feel good once it's done - about two hours of work but it's hard work! Maybe not too dusty today as it's raining. At least the winds are done for now - last night it was gusting something horrible here.
Momma's gonna sleep good tonight :)

Reviving this thread - I have a similar question on my heart group and this just seems like such a positive thing to pause sometime each day and ask what we are doing to take good care of ourselves - especially in the low carb/Intermittent fasting aspects ... Time to encourage others by sharing what we are doing that is GOOD for us - not just a "diet for weight loss" but what is really good for us emotionally, physically and even spiritually.

So what did I do for ME today - planned my office work so I was done at noon, had crockpot meal cooking for lunch and then allowed time to have fun making a pretty platter of fruit kabobs for the afternoon business meeting - I need to enjoy creativity more often not just rote counting calories, carbs or exchnges what-ever fits the requirement of the day - but make it pretty or fun or funny.

What GOOD did I do for me today? Took time to study Low Carb, started day with 16 ounce mug of tea ---
now ready for low carb breakfast egg nog. ---
then exercise bike ---
then to the office.

What did I do Good for me?....
Sunday afternoon we try to get extra good nap - and today I didn't even set a timer.. woke naturally after a little over an hours and felt sooooooo good. Thankful for the Lord's Day of rest built into our busy lives!!!

I love this "stop and think topic"...What did I do GOOD for ME today?
Studied what I ate "thus far" BEFORE I planned my dinner and ate wisely all day today!!!
Did allow the special treat the daughter made...sugar free-Gluten free chocolate cake at snack times but it was planned, small controlled portion and no regrets!!!

# of carbs is high total but in good ratio to good fats and proteins so I am OK with this learning and thriving!

Another fast day for me. Day 3 of 25! Not too hard. I stayed busy all day so it went pretty quickly.
