Jennywren, I'm all about salads daily, even for breakfast! I use oil and vinegar for dressing most of the time. I have a fussy eater at home (husband) who only eats processed food, candy, chips and sweets so we end up eating out a lot. I get salad but they typically are still full of calories and sodium. Fortunately my BP is super low (to the point where I pass out) so sodium is of no consequence to me - still not healthy in other ways though. But anyway, I typically take dressing with me if we are going to eat out so I don't have to eat the processed junk.

I guess it depends on your idea of healthy! ;) for me (doing Keto/low carb) I eat a salad daily, but it always has fun stuff in it like sunflower seeds (1T), green and or black olives, some form of meat (leftover taco meat, chicken salad, egg salad, steak, chicken breasts cooked in butter, seasoned), cheese and my "dressing" of sour cream with enough green olive juice to thin it to your consistency, some dill and salt (sometimes oregano with that, sometimes only taco seasoning in the base) .

I also do "loaded" veggies - broccoli, asparagus, cauliflower, green beans- with butter, sour cream, cheese and bacon. :) a meal in itself! :)

I have made pork roll ups with sauteed red/yellow peppers rolled up and teriaki sauce over the top baked until cooked through

I actually have a blog with a lot of my meal ideas.

These seem like very unhealthy recipes, but I use whole foods, nothing processed (for me, for the family they have a little more lattitude), but I am getting 3-4 servings of veggies and good fats/protein daily.

Mashed cauliflower! It's so simple and it resembles mashed potatoes, but I think tastes much better. Simply cut the cauliflower, boil for 15 minutes, drain, and mash up!

I love asparagus and when I can find it on sale, this is what I do...
Wash and cut the asparagus in half, along with some small red taters. Throw the taters in a skillet with a bit of olive oil and cook for a couple minutes, then add some garlic & onion. After a couple more minutes, add the asparagus and your favorite flavor of Mrs Dash. I usually use the spicy blend or just the regular. Total cooking time is about 12 minutes.
This makes a great side to just about anything!

I Place these ingredients into the tall Nutri-Bullet glass:

58 grams Beets, raw, scrubbed (approx. 1/3 of a medium beet)
58 grams Celery, approx. 1 stick
58 grams Granny Smith Apple, cored (approx. 1/3 of a medium apple)
0.25 tsp Ginger, ground
1/3 Avocado, California (Haas)
18 mL Lemon Juice
64 grams frozen Triple Berry Blend (or frozen blueberries)
3 packet Stevia (optional)

Add Water to the Max Line (up to near the top of the veggies) & blend until completely smooth. We tend to like ours sweetened, so adjust the stevia to your personal taste. I make a large smoothie for me and at the same time, make him one in the smaller cups, using 2 Stevia packets.
