That sounds great Aero_Nerdette! Yes, fresh is definitely better. I remember my mom making the frozen ones and I hated them! Although, the last couple of batches I got from the store had little worms in them...gross!!!

We had these homemade black been & quinoa veggie burgers last night and they were really tasty! I think I'm going to make another batch tonight to put in the freezer!

I like salsa chicken with black beans. It's just 3-4 chicken breasts in the slow cooker with a can of rotel and a half a jar of your fave red salsa. Cook on low for 5-6 hours, then throw a can or 2 of black beans towards the end. Shred with a fork and you can put it on tacos or make enchiladas, etc. You can also add sour cream or cheese if you like. It is healthy, cheap and easy!!

I've become obsessed with Brussels sprouts recently, too, Gwenn. I've roasted them with garlic and butter, and sauteed in the same. I can say that fresh definitely turn out better than frozen. I need to dig through my fridge and see what's available; I feel like one last pot of soup before spring really hits.

Just call me La. Most everyone else does.

That looks amazing! I have something simple that I have just been obsessed over the past few months. Just regular 'ol brussel sprouts! Basically you cut them in half, toss with olive oil, salt, and pepper, and cook in the oven at 425 for 20 minutes. Take out and pour 2Tbsp balsamic vinegar mixed with 1tsp of honey on top. So good.
