You're right, Ani, except for the enormous amount of sugar that most recipes call for. But you're right that using an organic nut butter and good dark chocolate would help it out a bunch -- and probably make it taste better, too!

Ooooh, pistachio butter. I'll have to try that -- they're my favorite nut!

I estimate that right around half my body weight is composed of peanut butter emoticon and, as such, I'm glad to hear that it's considered part of clean eating (I do eat the natural kind). I have it in on bread, on apples (ahem...my username), or by the spoonful if I'm really hungry and trying to tame my appetite while I prepare a real meal. I've always been hesitant to try the other types of nut butters because of my enormous love of PB, but perhaps I should branch out. I love pistachios...anyone have any experience with that one?

Awaah, they're probably not too bad (unhealthy) for us if we used a good quality dark chocolate and a good organic peanut butter....just FULL of calories. One per week wouldn't hurt...lol; who could stop at that???

It's basically a peanut butter ball dipped in chocolate, but you leave a little bit of peanut butter uncovered so it looks like the nut. I love them -- they're like a Reese's cup but better since they're always homemade (it's hard to find them commercially, and even if you can, they're disappointing at best) -- but they're pretty bad for you, so anything that can make them a little better makes me happy!

I am also a nut butter junkie! I make my own with nuts that I've roasted, since I found out I don't digest raw nuts well at all. I just make it as I need it out of bulk nuts that I keep hanging around. I've made almond butter, cashew butter, walnut butter, and mixed butters combining any of the above.

I have never tried sunflower seed butter, but I found a recipe in an allergy-free cookbook that used sunflower seed butter in place of peanut butter for homemade buckeyes, and as a born-and-raised Ohioan and former Buckeye myself, I'll just have to try it!

Yep. Or any health food store. If your in Canada there is Save-On-Foods and Costco has Maranatha Almond Butter. BIG jars of it.

I love almond butter and brought a couple of jars back with me this summer in my checked luggage, but you can't get it here unless you are military. I also brought back a jar of sunflower seed butter, and it was good; but the almond butter is the best! I can get peanut butter here, but it is very expensive.

I LOVE the almond butter as well...so good on a slice of apple, gala and butter lettuce or romaine leaf wrapped around it. I have a jar of sunflower seed butter that was more expensive however, I don't like it as well. When I buy something I don't like I make my husband eat it and he never complains. However, when I find something I love, I seem to keep it hid. :) I recently bought a jar of Power peanut butter that has flax meal in it and is very yummy. I love it with celery or thinned with tahini. Ok Laura, quit this, your making me hungry. Better go drink a protein shake. :)

Sunflower butter is my weakness. It's difficult to take a teaspoon as part of my daily fat intake and be done with it. One teaspoon can become four! But it is the only nut butter that I eat since I learned that a) I have high sensitivity to legumes and b) peanuts are actually legumes.

Nut allergy here so I stick with pumpkin seed and sunflower seed butters. I have also used pea butter.
Usually just eat it in a wrap with banana, or as dip for apple slices.

Good Morning!

I have some info on Nut Butters (LOVE that stuff!!!)

A nut butter is a spreadable foodstuff made by crushing nuts. The result has a high fat content and can be spread like true butter, but is otherwise unrelated. Nut butters include:

* Almond butter
* Cashew butter
* Hazelnut butter
* Macadamia nut butter
* Peanut butter
* Pecan butter
* Pistachio butter
* Walnut butter

None of the almond, cashew, macadamia, peanut or pistachio are true nuts in a botanical sense. However, because they are considered nuts in a culinary sense, their crushed spreads are called nut butters. Similar spreads can also be made from seeds not considered nuts in a culinary sense:

* Pumpkin seed butter
* Sesame seed butter (usually called tahini)
* Soybean butter
* Sunflower seed butter

Nut and seed butters are rich in protein, fiber, and essential fatty acids and can be used to replace butter or margarine on bread or toast.

The following table gives some of the nutritional properties of a selection of nut and seed butters:

I currently have in my cupboards and fridge:
Pumpkin seed butter, peanut butter, almond butter, raw almond butter, tahini
My FAVORITE is the Almond Butter. I have made my own raw almond butter before. It was good, but I actually like the taste of the roasted almonds better.
I enjoy nut butter in a smoothie, in homemade icecream, on a slice of bread with banana or just plain off the spoon.
I always make sure when I buy nut butter that there are no other ingredients except nuts.
