i will usually use a "light" version if available on some products like ricotta, cottage cheese, mayo and some semi/hard cheeses..i will use fat-free on yogurt, evaporated milk. i'm more interested in getting lower salt & sugar and more fiber & nutrition for my calorie expenditures. i try to be very selective when it comes to fats and tend to use "heart-healthy" fats like olive, coconut & avocado oils.

I use skim milk and non-fat yogurt, but regular cheese.

Very seldom. I've learned that "light", "non-fat" and "sugar-free" aren't always the better choice, especially when higher sodium or other ingredients equally detrimental are substituted. I'd rather just go with the regular and deal with it. In my opinion, the "lighter" versions are worse.
