Thing I cook all the time, from memory, but really I'm a book kinda gal. I've just never been creative in the kitchen.

Strictly by the cookbook or things I cook often. I don't do much cooking since the kids left home.

I always start by making a recipe as written so I know what it is supposed to taste like. If I like it, I'll redo it until the taste is affected then pull back. Under no circumstances will I compromise on taste. Fortunately, I don't have to.

Incidentally, one of the advantages of counting exchanges is that it is much easier to change recipes around and still know exactly how to count what I am eating.

Since I am domestically-challenged, I don't deviate although a few times I haven't a choice when I didn't read the recipe ahead and found I didn't have the same ingredients. I do try to take the healthier alternatives for fats though.

I just noticed when I typed this I put spaces in between each ingredient, but noticed it was not there, so I just put a coma in between.
I didn't want to make the recipe too long..hope it makes sense to you all.... emoticon

Blueberry Muffins.....Prep time 15min. Bake Time 22min. Serves: 12

Ingredients
2 cups all purpose flour , 1 cup splenda*no calorie sweetener with fibre granulated
2 teaspoon baking powder,, 1 teaspoon vanilla extract
3/4 teaspoon salt, 1/2 cup 1% low fat milk
1/2 cup light margarine, softened , 1 cup fresh or frozen blueberries, thrawed
1/4 cup honey
2 large eggs

Bake in 400degrees line 12 muffin cups with paper liners/spray with nonstick cooking spray

It doesn't give the points, but here is the nutrition
Calories 160, total fat 4.5g, carbs 29g,fibre 5g, protein 4g

Note: I used 1/2 cup of sugar instead of splenda
and I didn't use the honey...
I also didn't spray the liners with non stick spray, and they came out great, when cool...
I also got sixteen in stead of 12

Enjoy!!!
Liz

Oh, I should say that because I made them smaller, I checked them in 18min. with a toothpick to see if they were done, didn't want them to burn on the bottom... emoticon

I do my own thing. Recipes (even WW) are way too high in points for me. Now since DH and I are counting points it's fresh, steamed veggies (like lots or sometimes two varieties) and fish, shrimp, chicken or pork tenderloin, grilled. A tiny bit of olive oil on the fish for sticking but that's about it.
It's much easier to weigh out meat portions when it's cooked whole and you can portion than if a bunch of chunks are added to soups or casseroles.

Just yesterday I made blueberry muffins from the WW magazine and instead of using splenda ( don't have any) I used sugar.

I checked the comparison and I used less sugar, they are very good.

It says the muffin is 4 pt+ each and makes 12 muffins

I got 16 muffins...still counting them as 4 pt+

I use many wonderful recipes I have and enjoy. If it is a new recipe I make it according to
directions and the next time I may make some changes or add more veggies or whatever I think it needs.

The first time I try a recipe, I pretty much follow it as written, except when using butter and oil; then I might substitute and/or cut back on the amount, depending on the recipe. Other than that, I'm not a very creative cook.

Unfortunately I'm not creative enough to mess with a recipe. LOL I go by the book cuz I'm so afraid of messing it up.

Definitely creative. I look at a recipe mainly as an idea and go from there. I agree in baking you must follow it to the letter or you will have a flop.

It depends. If it is something new, I follow the recipe the first time. I also use broth instead of oil and omit butter in a lot of things too.

Creative ... think what flavors would go nicely together, pop them in WW's recipe builder and look at the PointsPlus value, tweak if necessary, then put it all together and make adjustments if the taste is not all I want it to be. What fun!
