Wow, that's great. I've heard of people using ground flax in place of eggs with good results. I've never tried it simply because I have nothing against eggs!

I tried my first attempt at substituting and it turned out great. It was a chocolate crinkle cookie. I didnt have eggs so I substituted ground flax seed and water. I used unsweetened natural applesauce instead of the oil. I also used wheat flour instead of white flour. It called for rolling the dough balls in powered sugar before baking, but instead i only lightly dusted the tops after baking. They are full of fiber and less calories... and very low in fat. They tasted pretty much the same as the original recipe!

I have tried the pop thing. I dont like diet pops at all (and dont usually drink any anyways...) I have a bag of ground flax that says it can be an egg substitute but I'm too afraid to try it. Sometimes the things that work as substitutions are just.... weird! Too weird.

you can usually substitute fruit or vegetable puree in most cake or muffin recipes for about half of the fat (butter/oil) without too bad results. I wouldn't do this in cookies or most bars b/c it will change the consistency to be more fluffy instead of chewy.

I don't substitue a lot - mostly because I'm not willing to settle for an "okay" end result.

I do decrease the oil/butter. You can cut out about 1/3 without noticing.

One of my easier summer time favorites is Diet Cake. One box cake mix blended with one can diet soda, cooked in a dutch oven. Any flavor combination is good, and lite whipped topping makes a great frosting.

I know we all love to bake... but what about all those really unhealthy recipes that I'm dying to make but really dont want to put them in my calorie counter!? What do you use to substitute ingredients to make recipes healthier? I have things like unsweetened natural applesauce and agave nectar that I've substituted in other recipes, but Ive never used them in baking recipes yet. Any ideas or things you substitute? How did it taste? Did you notice the difference? Did you like it better?
