From what I understand you can't sub coconut flour directly for wheat four. It doesn't have the same protein structure to have good results.

I do have some in the freezer, but haven't tried it yet. DD is a recently diagnosed celiac, so I'm finding lots of new ways to cook without regular flour.

If so, what are your thoughts?

How have you subbed it in for flour (100% substitute) and what were the results?
