Hi all - Last weekend, I had the most wonderful cookies from Trader Joe's. They're called "Inside Out Carrot Cake Cookies", and basically they are 2 carrot cake-inspired oatmeal raisin cookies, with the cream cheese icing sandwiched inbetween. They were awesome! I saved the label, with the ingredients and the nutrition facts. Are any of you able to help determine ratios/measurements for the ingredients? I'll list them here, in order:

Cookie ingredients:
- unbleached enriched flour, brown sugar, carrots, raisins, rolled oats, eggs, butter, palm oil, sugar, honey, vanilla extract, baking soda, cinnamon, nutmeg, salt

Filling ingredients:
- cream cheese, powdered sugar, butter, vanilla extract, citric acid

Any help you can provide would be GREATLY appreciated. I am someone who loves to bake, but I don't have any experience making my own recipes, I just follow others'. Also, I won't be using palm oil - do you see a problem subbing peanut oil instead? That's what I usually use in all of my baking.
