Well, they are too hard as in can't bite them. I was just wanting to add less fat in general but not take it all out is why I was thinking of bananas or applesauce. Thanks for the tip.

Hey,
Are the cookies too hard (as in you can't bite into them?) or are they just too crispy. If they are hard it is because of too much flour, if they are crispy it is too much butter/shortening.
If you are looking for a chewy cookie, try a recipe that includes eggs. Egg gives a more cake-like texture and acts as a leavener to help avoid those flat cookies. I have only heard of adding banana or applesauce as a substitute for eggs in vegan recipes, I'm assuming you aren't talking about vegan baking...
For recipes I would recommend America's Test Kitchen. I've never had a problem with any of their recipes, and they make all sorts of baked goods. You can get some recipes online for free or find one of their books or magazines (Cook's Illustrated) at the library.

I need a tip on baking. Though I have never been a sweets person, I have started baking for others and enjoy it. I have many problems though.

1. How do I keep my cookie dough not becoming bread dough and vice versa.

2. My cookies, nine times out of ten, become hard. Someone suggested banana or applesauce. What is the ratio? Does it work for all cookies?

3. I added banana to a chocolate chip cookie recipe that also had self rising flour and baking powder. My cookies were flat. Was it because of the banana.

4. Lastly, does anyone have a basic cookie dough recipe that they have tried and like that includes vanilla? I am looking for something I can modify (add banana etc...) but basic enough but still has a good flavor.
