i promised the eight year old her favorite cut out cookies with pastel sanding sugars, but i'm keeping all the cake pans in the cupboard! just cookies this year!

I was put in charge of baking for the family's easter celebration and I must say, I'm secretly pleased! I am making:

Pound Cake cupcakes with to-die-for Chocolate icing
Chocolate cupcakes with a cream cheese center and whipped cream icing
White Chocolate covered oreos dyed spring colors!

WHOOHOO!

Anyone else finalize baking plans??

I think we all fall into that...when there are only two people to eat the sweets and both are trying to watch what they eat it is almost easier to NOT bake. I always send them to work with the boyfriend :). His co-workers are happy and it gets us out of the house.

It sounds like you are making so many delicious recipes! Do you mind sharing any of them or are they top secret??

On Easter my church is having a bake sale so I am planning on making:
Lemon Curd Tart
Flourless chocolate cake
French apple tart
Bittersweet chocolate caramel tart
Pineapple upside down cake
Challah
and maybe make some chocolates

I'm so excited because I haven't been baking lately because its only my husband and I and we're both trying to eat healthier.

Mini ANYTHING is always a good idea. My mom bought me this "small bites brownies and bars" Southern Living cookbook. It has lots of delicious recipes but they all are for a 7 1/2" pan (which it came with). It is so wonderful since I only have 2 people (myself included) in the household!

We are divving up Easter meal components later this week for the big family gathering so if I get the baking job I'll happily do it but, like you, usually end up inhaling like, 1/2 a cup of icing :)

I'm good with the batter, but frosting...I'm sure if I added up all the little "tastes" it would be quite alarming.....half a cup of pure buttercream frosting does NOT do much for the bottom line! emoticon

I thought maybe I'd make mini cupcakes, then if I am tempted, at least it's a smaller transgression. Really, since I'm trying to be super good for April, i should lock the kitchen door and throw away the key....but I enjoy baking and sharing too much to deny myself the fun!

I dont know how it is for everyone else but when I bake I dont really want to eat the sweets there is something about the smell

So cute! My birthday is the 29th, and for the 28 days leading up to it (starting yesterday) I am doing no white sugar/no white flour in the diet. NONE. So while I want to bake for Easter I know I will be too tempted to eat the batter...and icing...and finished product. So we will see.

The cupcakes sound cute! I saw a cake where they used dyed coconut as "grass" around the bottom and it was presh. You could also get those cadbury mini-eggs (the candy coated m&m type, not the filled, chocolate ones). A lemon tart would be nice and springy as well.

I'm trying to stay STRONG STRONG STRONG this month, but of course I have to bake SOMETHING for Easter. I typically am the one bringing the cheesecake to the in-laws, but I also have a hankering to make some cute cupcakes. I thought maybe a peanut butter cupcake with peanut M&Ms masquerading as eggs on top of some fluffy buttercream frosting. Maybe a jelly filling of some sort? I don't know.
