I love my crockpot! I have a large one and it still wasn't big enough for my whole family, but is more than enough for DH and me now. If anyone wants to make apple butter, it works well for that, too.

I just finally checked out this thread, so haven't visited the site Tina posted, but am going there today!

I pulled the crockpot out for the first time since last winter to make Venison Roast and found we are growing out of it! LOL Definitely need to invest in a bigger one, I could only get about half the potatoes and then all the meat in it! Had to do the rest of the potatoes and veggies on the stove! :)

Usually, I just use the crockpot for roasts with potatoes, carrots, and onions. I just add a half a cup of beef broth to the pot with the meat and veggies and dinner is good to go! :)

I would love to find a good Minestrone recipe...I'll have to look through that link that was posted below.

here's a recipe I used to cook in the crock pot that had to be moved to the stove top:

corn chowder that has morphed into a sort of veggie soup:
carrots, celery sauteed in a little extra virgin olive oil, (sometimes I use soy spread)
I add garlic at this point. If you can eat or enjoy onions, this would be the time to add them.
Then I add zucchini, squash, corn and potatoes. I've also added wild rice in the past. (it will turn the soup DARK) Oh yes, I've also added pasta for a cub scout pot luck and the boys LOVED it.
I add Steak & Chop Grill & Broil Blend at the end and sometimes salsa too.

I've had to stop using my crock pot, because my ds consumes whatever I cook in it in two days. LOL So we're back to the stove top.

I'm with you Tina on no cream of whatever. Though I try to avoid anything canned. I modify just about every recipe I come across trying to make it healthier and to fit our eating style.

I'm hoping to sit down with my daughter and look over the crockpot website this week to get some good recipes. She is planning to make crockpot lasagna tomorrow. I'm not sure where she got the recipe but my kids love it. I just need to enter it into the SP recipe tracker so I can see if it will work with my nutrition plan.

Oh Tina, that does sound good.... ! I just finished gardening...shower than sitting and doing meals and which recipes.Trying to be more organized... this way we will eat better! Thanks for the site.. let us know how it turns out..

We're having the garlic honey chicken tonight with chinese green beans and corn on the cob.

Does anyone have any favorites to share? Time to start using that thing. :)

I always look for recipes that don't have cream-of-whatever soup in them. I promise I'll post a couple here soon!
