Good for you!! I have found there are many veggies we can freeze without cooking.. LOL I take full advantage!

Bought some beets to pickle and corn to freeze today. My mom was researching on freezing corn, and she found some sites showing not cooking it before cutting it off and freezing it.

The Ball Blue Book is great. Don't be afraid of your pressure canner, Tina. There's really nothing to it! Just read all the directions first, or have someone experienced demonstrate for you the first time--eazy-peazy!

I don't really have time to can either. Freezing works best for me right now. My tomatoes are still green; I'll probably freeze them when the temps suddenly drop. Hope to get some onions to cut and freeze. Last year there was a bag of them left after the church dinner that I took home. It was very handy having that all cut up!

I think something's eating my peppers! emoticon

I did buy some beets to pickle like mom did years ago, and just kept them in the fridge.
Bought a pressure canner, but haven't tried it yet. Bought a nice book from Ball, I think it was, next to the canning supplies last year.

I am usually up to my eyebrows in produce at this time of year, but not this year. Our camping vacation was late in the summer, and then another trip to a family reunion brought us right up to the beginning of school. I usually get pears from my mother, but she's moving right now, and isn't dealing with her fruit trees. My DIL didn't plant green beans this summer. She thought we still have a whole shelf from last year, but we've used them all. So, my pantry shelves are going to be pretty bare this winter unless someone gives us apples or something.

We do have a lot of tomatoes and peppers, so I'll probably freeze or can some of those.

I admit...I'm only freezing because I have no extra time to can. Ugh! But I have zucchini, peppers, onions and tomatoes (thanks for the tip on this one, Tina!) all put in the freezer......at least what has come in so far. :)

I just finished maing my bread and butter pickles.. We will have enough for the winter and to share. I have cut up tomatoes , peppers ,squash and eggplant and frozen them..
Now for some sauce...

Jenny, I just google the veggie I want to know about and wonderful info comes up on the internet!

I'll admit it. I don't really know how. I need to learn. We have a garden, but I don't know what to do with the food besides eat it fresh. We did shred some zucchini and stick it in the freezer and I'm hoping that will work for bread or muffins later. We are still getting Roma tomatoes. Do you have any advice or books to suggest?

Anyone preserving any summer goodies? It's also that time of year! I plan to hit the farmer's market big time this weekend. I have been freezing corn for the winter.
