One of my favorites that fits into all three cycles of my diet plan (The 17 Day Diet) is turkey burgers. I use romaine lettuce leaves as buns and pile on the veggies and a slice of fat-free cheese. Even my kids enjoy turkey burger night. :-)

I've been making a rice pilaf from 1 part brown rice, 1 part barley, and 1 part wild rice. I use about a cup of each, so it's enough to last us for a few days. It's really easy to scoop out a half a cup of rice for me and a cup for dh, saute' some veggies and serve over the rice for a hearty summer meal. I usually cook meat the same way and add a measured portion to our plates.

I really like my meat and am finding that the bulk and chewiness of the high-fiber pilaf is quite satisfying.

Sounds great and yummy. You covered all basis. We do a pig-roast every Memorial Day picnic we have (it's more like a family reunion each year). I can tell you're getting excited! It's almost here! Woo-hoo!

Well, I'll pick the grad party food. emoticon

Did I tell you dh is going to grill a pig? Complete with the apple in its mouth. :) Sides are coleslaw, beans-I'm still debating just Bush's or calico, crab (fake) macaroni salad, the veggie macaroni salad, watermelon/other fruit?, and bars and cake. I had potato salad, but like the two other salad ideas better, I guess. What do you think?

Now I hadn't heard of the purple hull pea, and you're telling me there's a zipper pea, too? I think I've heard of the cow pea, tho I've never seen those either. The things one can learn! :)

Purple hull PEAS....Yes! easy to find in the south. Bush's purple hull peas and other brands are canned (extra salt). Try your DRY peas section most stores carry it. Or wait a few more weeks and run into a neighbors garden and pick some fresh......:)

If you can't find it substitute another dry pea...BLACK-EYED PEAS, cow peas,zipper peas?
NOT English peas

Please include the garlic and the hot sauce you don't want it bland.

A great Southern one dish family meal.
Cook plenty.
I add extra veggies and brown rice to make it healthier. The southern version is yummy but high in sodium. It is on the back of some of Bush's purple hull pea cans.

saute in large pan....with a little oil
1 big Onion -sliced/chopped
2or3bell peppers-sliced/chopped/red,green,or yellow I did all 3 tonight (goodsale@store!)
ham already cooked-sliced or chopped 1-2 lbs. for a big family
garlic

add to this pan and warm it all up
2 or 3 cans of purple hull peas.........rinse to get rid of extra sodium
add some veggie stock or don't rinse the peas,you want this a little... liquidy
add hot sauce .....this really makes the whole thing work!..... as much as your family likes!

cook - brown or white rice

scoop your Hoppin' John over the rice

Easy .....make it before you mow one day.....and just warm it up later.

I made a big batch of tuna salad yesterday, so we have had sandwiches for two nights.
I cut up some fresh broccoli tonight and added a little sweet dressing and tossed....a good and easy combo with the sandwiches.
A liitle to much fast food for us lately also.

We've been eating some fast food and making do with whatever bits we can find around here lately. Between extra ballet practices, youth group meetings, track meets, and getting ready for graduation, there hasn't been too much cooking going on around here lately! emoticon

Went to Old Country Buffet with my mom and dad and sister for Mother's Day. Ate a bit over, but so much healthier than I would have in the past. First plate was lots of green salad and a small dab of the crab salad and waldorf salad. Then I went and got some of the vegetable soup. Fill up on the healthy stuff first, right? Then a few shrimp a dab of mac and cheese, some spinach marie and corn. I did get a bit of dessert-can't get bread pudding elsewhere, but overall wonderfully healthy choices, so I'm feeling good about it.

Last night I was making more elk meat chili to put into the crockpot today and I made up a couple of burritos from the meat mixture--added a little pepper-jack cheese and low fat sour cream. Very quick and satisfying.

The chili is now in the crockpot for tonight's dinner. I'm feeding DD#1's family too.

The upside down pizza was pretty good! I'd use partly pizza sauce instead of all tomato sauce next time.

My kids have been making fruit and yogurt parfaits for breakfast lately. Just have to keep them stocked with vanilla yogurt, 'cause I do have frozen fruit!

Let us know how the "upside down" pizza works/tastes. It sounds interesting and good. Tonight I'm going with the crockpot, yes, I love my crockpot. Roast, carrots, onions, and a jar of banana pepper juice, throw in a little Italian spices.....................mmm.... one of my families favorites. Add some sweet potatoes from last night (I usually cook a double batch) and we are set.

We did Mexican tonight also. I cooked some chicken, then shredded it/cut it up. I mixed the chicken with
garlic season
a jar of salsa,
a can of sweet corn,
crumbled up some about 2 handfuls of tortilla corn chips and
the chicken stock from cooking the chicken
Mixed it up and warmed/cooked it for 25 minutes.
When it came out I divided it up and threw some shredded cheese on top....less for me....more for the boys.
I use to do this casserole with sour cream and more cheese.....mmmmmm.....those were the days. This version was good though. I served steamed broccoli with it.

I was thinking of those! Maybe tomorrow night! How do you fix yours? I just cook the chicken, then sliced onions and peppers in there. Then we just add sour cream on the tortillas.

I'll definitely making homemade "fried" chicken for them from now on. I'll have to try my hand at chicken and dumpling. My dear grandmother was from the south and since I lived with her half of my childhood years, you'd think I would be making this already. Time to give it a go!

My hubby knows that he should go there for lunch without me if he's craving it. Days when he suggests fried chicken dinner from the grocery deli, even the kids vote him down! He's just got us down on fried chicken. lol

Now offer chicken and dumplings and the kids will jump for joy! lol

We had KFC yesterday. My DH had the extra crispy, but I had the roasted/grilled. I wasn't impressed. Has anyone else had this?

Elk is really good! I've gotten some from a neighbor and bil in the past. And I love buffalo, too.

Now that's something I've never tried. Buffalo and deer, yes, but not elk. I do bet you it was good!

I made a big crockpot of chili beans with ground elk meat and some homemade tortillas. For something different, I put a can of creamed corn in with the masa before making the tortillas. They were really good!

I made meatloaf from the cow we purchased. This beef is AMAZINGLY lean. I threw in a bunch of onion, spinach, and mushrooms. Plus I used steel cut oats in place of the bread crumbs. Wow! It was the rave, the ones that actually "like" meatloaf loved this one! Homemade scalloped potatoes and salad finished our meal off. emoticon
