Snacks are fruit: strawberries, blueberries, orange, apple, pineapple; or veggies: carrots, peppers, and cucumbers. Weekdays when I'm not working usually include a large veggie salad for lunch, or some type of veggie soup for dinner (broccoli, tomato, chili, etc.)

Lately we've been eating a lot of raspberries and blueberries. They've been on sale and the extras I've been freezing. Love them in pancakes in the winter.

I love peanut butter with bananas or celery. I make "Bugs on a Log" for the kids with celery, PB, and raisins and I love that combination!

Lately, it's been apples and oranges around here for quick snacks. We're eating more salads now that spring is here and we're eating a little later in the evening because it stays light so much later.

I'm generally low on protein, so I've started taking a small wedge out of the length of a banana and filling it with a tablespoon of peanut butter. Good combo, and I've eliminated the bread. ;)

I keep baby greens in the fridge for a quick salad. I've also got a little garden box that has some chard growing in it. We've been able to enjoy fresh chard all winter and now that spring is here, it's going to seed. I think I'll go cut the seed heads off and see if it will keep giving me leaves.

I use them with every meal. I do the same thing as you do with breakfast... or have them raw with a drizzle of agave nectar on pancakes... or we use frozen berries in our oatmeal. Some mornings, I saute veggies, toss scrambled eggs ontop and add some salsa or guacamole. Yum.
For lunch, we usually have the previous night's leftovers.
For dinner, we usually have a protein (meat/beans), starch (rice/sweet potatoes/potatoes/gluten free breads) and veggies.
I have two bowls of fruit on the table for easy access for the kids or when I want something sweet. (Clementines/bananas/apples) it also encourages the kids to have them rather than "junk" (which we don't have in the house, anyway... but, sometimes you really crave sweetness!)
I also have a huge tub of yogurt in the fridge, and at night I put 1/2 a cup of it in each Tupperware dish, + frozen fruit + 1/2 tsp sugar for each of us. By morning/snack time the fruit is melted and it's very welcomes by the kids. emoticon
I also buy baby carrots to snack on, too. We have chickens, so we round out snacks with boiled eggs for protein...
Anyway, that's how we do it.

I've started cooking some strawberries and blueberries with a dollop of apple juice concentrate to make a fruit topping for pancakes or whatever.

And fresh green beans are becoming a favorite. Even cooking the steamed beans with a couple slices of precooked bacon is low in calories!
