Got out the list that I put in my cookbook:
tuna salad sandwich or tuna pasta salad
grilled cheese
fried egg sandwich
nachos with taco meat
pizza on french bread
baked potato topped with chili or bacon and sour cream
black beans and rice
frozen burritos or such sometimes for a treat
leftovers
cottage cheese, fruit and a bagel
taco soup
fried rice

My kids enjoy fat free refried beans with some cheese in a tortilla. They'll also go for black beans and rice which is quick if you have leftover rice.

Sometimes we make a veggie pizza for lunch. Just fix the lowfat crescent roll dough while you eat breakfast. Broccoli and cauliflower go down quickly that way! My kids prefer them raw.

I make a lot of salads with whatever chopped veggies I have on hand, a handful of nuts and sometimes some sort of cheese. (I lightly steamed the harder veggies for my toddler- a little less every couple weeks- until she was old enough and used to chewing thoroughly).

Anyway to help get them excited about eating salads- I let them choose whatever salad dressing they wanted at the store- and I let my dd8 pick anything she wanted in the produce department and we create a salad or meal around it (she loves to try exotic things, but often goes back to her favorite from the first time we ever did this- an Asian pear, which we put in a salad of spinach, slivered almonds & shredded carrots, with Trader Joe's Raspberry Dressing)...

anyway I guess letting them be involved in the planning, picking and preparing- we get creative together and discover new favorites from time to time...

My children love pita pizzas on whole wheat pitas. Add whatever veggies they want and a little cheese and your good to go. (You can make these on english muffins as well.) We also love frozen red grapes here.

I am looking for some help with planning lunches. We always plan the week out but I tend to make the same things for lunches every week. HELP! Any ideas that work well for your family?
