You did better than I did Terri! I made North Carolina BBQ (pulled pork sandwiches) and PA Dutch BBQ (Sloppy joes) .. and had 2 1/2 sandwiches!! Oh no!! I was very good for dinner though! Had 1 slice of Turkey breast, 1 scoop mashers, 1 1/2 servings broccoli ... oh .. but the gravy .. yum!

I know what you mean Varina. We generally have leftovers. I like to buy the large box of spring greens to make a quick salad out of. I add whatever we have in the fridge for protein and a couple of Tbsp of my favorite dressing, and I'm in good shape. It seems to be the easiest way for me to get my veggies, since I'm a dyed-in-the-wool carnivore!

Today I had the last of the green beans, 2 spears of brocolli, 7 spears of asparagus and a polish hot dog! LOL--an almost healthy lunch~

Lots of times my kids will have a frozen pizza - my littlest is allergic to dairly and egg, so she will have hot dogs or deli meat. I've also been doing better buying fresh produce, so we will have some fruits and veggies with it as well. We're on a tropical fruit kick right now, so it's lots of mango (which my dd call "flamango"), kiwi, and starfruit.

During this weather I love soup. I make my own (a big batch) and divide it up into portions. Right now I'm eating a black bean and tomato soup that is really yummy. I've also been making myself big salads with either chicken breast or tuna.

I'm sorry about the gluten free, I have to be corn free .. so I have some issues with foods too. You could do pb&j on rice cakes maybe .. you have to make sure the rice cakes are gluten free, some are, some aren't. Do you have a bread maker? You could make beans and rice: this is one of our staples. You can top it with different things, grated cheese, salsa, sour cream, chopped onions, chopped bell peppers. Whirl it in the blender and add tomato sauce to it, spice it up with some cilantro and serve with corn chips.

Oh how I had hope that this thread would help me. I HATE lunch. Fixing lunch every day and still getting through school makes me lose my mind.

I wish we could eat like you. My kids would love a PB&J but we are gluten-free. I am going to try tuna someday soon. My son tried it once, when dh picked up a can, an says he likes it. We'll see:) I have to convince myself to smell that stuff first.HAHA

We do eat pasta about 2x a week made from brown rice. We do wraps with corn tortillas but that takes time because I throw them on a griddle. We do hot rice cereal with fruit once a week.

Hmm, lunch:

-Mac&Cheese
-Mac&Cheese with mix-ins - we all love peas mixed in .. and to that we sometimes add ground beef or tuna. If we don't have peas we'll do the beef or tuna alone.
-pasta with sauce
-Pasta with butter and parmesan
-tuna sandwiches
-tuna salad on triscuts
-roll-ups (tuna, leftover poultry .. whatever we've got!!
-burritos
-pb&j

My dh usually takes the leftovers to work since he loves leftovers! If he's deployed then we get leftovers!! lol

I buy the packages of baby lettuce greens, bags of baby spinach, and some Romaine lettuce so that I can throw together a quick salad. I've been having a half an avocado, some green onions, fresh salsa and a dollop of sour cream on it lately. It tastes very much like a taco salad w/out the chips or meat. I'll add whatever meat, eggs or cheese I might have to a salad like this for variety and protein.

My homeschooler is 16, and my granddaughter usually brings her own lunch, so I don't prepare meals for them. If we have leftovers, they'll pop something in the microwave.

Many times, I'll put a pot of something on the back of the woodstove for dinner and we'll have it for lunch if it's ready. I like to have something ready for dh when he gets home or he'll go outside and start a project and not eat until he comes in to shower and go to bed.

I usually skip lunch myself. Unfortunately, I am more of a grazer, so I have to keep fruits and vegis at my side or I will eat "junk". My kids like to eat pretty much anything, but usually go for fruits and vegis. If we are at my moms, they have a variety from hot dogs to mini tacos and taquitos.

Well we seldom have enough left-overs for all 7 of us, so if there is a little left-over I eat that, but the kids usually eat sandwiches. I bake whole wheat bread so their meal is high in fiber (and calories!!) and protein because they usually eat pbj or pb and honey sandwiches. My kids are really thin so I pack them with calories (sigh). Every day we have carrot slices, celery and broccoli with ranch.

I find that I eat way less calories if I eat a burrito(my favorite) than a sandwich, because no matter what kind of sandwich I eat, I feel like I have not eaten and will go back and get something "real" later. Sounds silly, huh.

Oh yeah, if we have a whole bunch of seperate little leftovers, we have smorgasborg (?) and the kids love that.

The kids usually dig into the fridge and serve themselves. Oldest ds will also fix me a plate sometimes. :)

Leftovers are first choice around here. Otherwise we might make mac and cheese, tuna salad, grilled cheese, bean and cheese burritos, ramen sometimes. Homemade soups, too. We don't eat sandwiches too often.

Well, the kids generally get sandwiches, tortilla rollups or quesadillas, chicken nuggets, pasta, or leftovers. I always serve veggies with dip and/or fruit with lunch. (Well today my daughter chose a salad instead, but that is not common.)

I usually have a big salad with some leftover meat on it OR I do a lean cuisine or other diet meal. And yes they are quite good but some are too high in sodium for me OR I have a sandwich on whole wheat lite bread or rolled in a wheat tortilla with a side of veggies or fruit or maybe a light low sodium soup.

I really like the frozen meals. And the brand I get sometimes goes on sale for $1 each! I had the Buffalo Chicken Rolls (like pizza rolls) today and it has 2 servings in it at 190 cal/serving. I had one serving plus a salad with lite ranch today.

HI there,

Today for example, I made mac and cheese and cut up celery and carrots with ranch dressing for the kids.

For me, I ate 15 multigrain wheat thins (one serving) with 1 1/2 oz. of dubliner cheese (too much fat though but yummy) and I ate celery and carrots without ranch.

I also will serve leftovers if they like them, as well as nuggets, pbj, cheese sticks.....

I so wish someone could make meals for me. Wouldn't that be so great.

How are those frozen meals. I never do that but that is such a good idea. Lunch is always a struggle for me to find good stuff that I am interested in. Much of my problem is not eating enough.

Well, I have different food limits than does my child.

She loves chicken noodle soup, ramen noodles, or a grilled cheese sandwich for lunch. I usually have some leftover meat or cheese, with a little lettuce or sprouts as a sandwich or tortilla roll-up.
Yesterday it was a sandwich on pita.

We both drink water all day. She's allowed 1 cup of juice per day and I get 1-2 cups of coffee. We don't like soda/pop/coke.

I'm just wondering what everyone does for lunch since we are all homeschoolers and have to plan/prepare lunch for our kiddos each day.

I'll go first... half the time, I tell the kids to fix what they want, as long has it has a couple of food groups in it (i.e. meat, grain, maybe dairy). Sometimes I warm up a few cans of Clam Chowder or bake some chicken nuggets or pizza. Sometimes, I tell them to pick leftovers to reheat & eat.

For me, I like the Lean Gourmet by Michellina's (sp?) meals from the frozen food section. I usually eat one of those with a salad. If the kids are having sandwiches, I will sometimes eat that.

What do you do for lunch?
