We plan meals. This week we are going to make a dinner quiche-thing with hashbrowns for the crust that will feed us for several nights and lemoney risotto with asparagus and I am not quite sure what else. Our meal planning included this weekend which consisted of scallops with spinash and mushrooms with balsamic vinegar and new potatoes last night and sweet potato fries, white beans with tortillas and guacamole tonight. Left over new potatoes from last night got turned into breakfast potatoes this morning with yellow bell pepper and onion. I heart cooking.

Do any of you guys plan your meals for the week? I'm not using the meal planner on the nutrition page, but I do plan my meals ahead of time, otherwise I'd go buck wild and buy two tons of crap at the grocery store.

So far, this week I've got:
* jerk chicken, roasted asparagus, and lentils and basmati rice with tzatziki sauce
* chickpea daal and basmati rice
* minestrone or some sort of vegetable soup I will make today
* tuna melt and popcorn (with olive oil and nutritional yeast)
* curry with coconut milk, tilapia, and green beans with basmati rice

For lunch, I usually walk over to the grocery store and grab an Amy's frozen meal or some sushi from the deli. Now that the weather is getting nicer, I'll sit outside my work and eat on the curb, but usually I crouch on the floor by the back door and scarf food down. Needless to say, I don't get much enjoyment out of lunch.

I eat that type of meal a lot! I love sauteed veggies - nice and filling!

I had sauteed mushrooms, tomatoes, green pepper & wilted lettuce again today (with a little bit of ground turkey that my mom cooked up).

Dinner was a romaine salad with 1/2 cup of no-fat refried beans, 1/2 cup brown rice, 2 oz of avocado, salsa, and a little cheese. (Basically a taco salad with no taco).

Green peppers, onions and garlic sauteed in cooking spray with black beans and one small corn tortilla. Its a lot more than it sounds, I swear!

They brought in lunch at our office today so I only ate a little of the breaded chicken and pasta and took a whole lotta broccoli since everyone was leaving it behind anyway!

Goal 1- 10% - 232 lbs
Goal 2 -10% - 209 lbs
Goal 3 - 10% - 188 lbs

What age kids do you teach? (I hope I'm right that you're a teacher!)


I'm sooooooo bored with lunches!!!
Today will either be: Subway, Jimmy John's (no mayo), or a Lean Cuisine Pizza.

And I'm going to try to make some soup tonight - maybe garlic white bean.

I gorged on Taco Bell today.

After I came back and plugged everything into my food thing, I was doing ok. I was VERY Surprised.

So then I had cereal for dinner and I'm within my range! (at the very very as close as you can get top of it, but...not hundreds over like I would have thought!)

Today I had a subway salad (the sweet onion chicken teriyaki one). It had surprisingly more calories than I expected... must have been the teriyaki part...

Y - he made this one from a recipe in Gourmet magazine using the Everyday Food TV show pizza dough recipe. It was complicated and took three pounds of escarole and it didn't look quite as delicious as the picture would have us believe but it was good! And best of all there are several portions in the freezer! Piiiiiizzzzaaaaa!

My husband's been making pizza, too. He's using veggie pepperoni & .5 oz cheese per slice, which makes it not too bad.

Vik: don't feel bad. The only low cal dressing I really like is Trader Joe's Santorini Low-Fat dressing (it's a greek dressing). That plus fat free feta makes any salad a great salad! I'm just at work, so my options are limited. And, I have tons of half & half in my coffee every day. We all have our vices.

Homemade double crust pizza with escarole and fontina courtesy of my husband's efforts. I calculated and believe it or not its only 250 calories for one slice that is 1/8 of the whole pie and escarole is really high in vitamin A and C.

Dang.
Your salsa makes me feel bad for my 2 Tbs. full fat caesar dressing! I have a hard time choking down FF or reduce fat dressings, so I figure it all works out in the end with next to zero cals for the lettuce.

So yeah, I had a caesar salad.

My lackluster lunch included 1.5 cups of leftover salad greens (from last monday when I bought them at the grocery store for my work lunch), 2 Tbsp of salsa for dressing, 2 cups of fresh broccoli that I steamed for about 2 mins in the microwave, and 1/2 cup brown rice.

And then I saw a HUGE tray of brownies with lots of frosting in the workroom, so I got a small one...

For afternoon snack I have a banana and 1 serving of lowfat triscuits.

i have a break at 11 today and a break at 12:30, so i eat two small lunches on friday. lunch 1 is 2 cups of homemade vegetable soup and a slice of whole wheat toast. lunch 2 is a spinach salad with tomatoes and chickpeas. the virtuousness of these two ought to compensate nicely for the micky d's i had for breakfast. ha!

I am trying to space out my eating better and do approximately 250 calories 5 times a day so today for lunch I am having 1 cup of Trader Joe's Minestrone Soup, one slice of wheat bread and a 1 oz. slice of havarti cheese.

Today I had leftover white rice (sometimes I can't wait for brown rice to cook!) with tofu, baby spinach, asparagus and red pepper that I stirfryed up in the wok last night. Oh - it was in a black bean sauce that was just some black bean paste, water, cornstarch and a little brown sugar. Yummy!

P.S. Instead of my normal string cheese and fruit snack I went all out and had a Pineapple Upside Down Cupcake that I made for a friend's birthday last night. And then I gave all the rest of them away.

Umm....today I had a BBQ Beef brisket sandwich and fries. But, that's not typical. Nor was it even an attempt at eating well. It was, however, very very good.



Usually its a lean cuisine (pizza), soup or a sub sandwich. Bo-RING!
