Last night I made Chipotle Black Eyed Peas, Organic Brown rice and steamed mustard greens

Tonight we are going to make baked potato slices (bad I know but we have to use up the potatoes - small portions small portions!) with grilled swordfish and some sort of vegetable, baby bok choy maybe?

I also have the ingredients to make curried tofu with spinach and chickpeas and homemade tofu burgers if I feel like getting more tofu.

Lunches will be leftovers and salads. I am also making some hummus tonight to eat during the week for lunches.

so here's what I did to avoid the grilled brie and apple sandwich: I made a reservation at a different hotel! This hotel has veggie gyoza that are yummy, but that can't be as bad as the grilled brie - did I mention it's on raisin bread? Also, I can probably avoid the gyoza, whereas I have no willpower for the brie!

Breakfasts: I think I'm going to do egg whites on whole wheat English muffins, with some turkey bacon or veggie sausage.

Lunches: I think I will stick with green salads, but will mix in some chicken breast and stuff it into whole wheat pitas. Otherwise, various leftovers.

Monday dinner will be turkey chili and cornbread, maybe some spinach salad.

Tuesday: chili leftovers or a big spinach salad with sauteed chicken sausage and peppers on the side

Wednesday: Pasta and salad, maybe some fresh bread

Thursday: ??? Thai takeout maybe

Friday: It's my birthday, so maybe we'll go out?

Saturday: I am hosting a bridal shower in the evening. Food this day will consist mostly of my tasting everything I'm cooking for seasoning, which will cause me to have no appetite to actually eat by the time the party starts, which will result in my becoming completely obliterated by the first martini I have. Well, I hope not.

Sunday: Too hungover to eat anything but saltines. Hopefully not, probably will have lots of leftovers from the party...maybe will try to go snowboarding since we FINALLY got some snow.

I made a big batch of veggie lentil soup this morning, which I will probably take for lunch this week...

As for dinner, I am having:

Monday: Spaghetti Squash with tomato sauce, veggies and a touch of fresh parmasean cheese.

Tuesday: Sweet Potato Wedges with Tofu Steak and a green salad

Wednesday: Curried Chickpeas and Grilled Veggies over cous-cous

Thursday: Vegetarian Chilli

Friday: Homemade Veggie Burgers

I always plan meals for 6 days at a time.
For breakfast I usually have oatmeal with dried fruit of some type and a splash of soy milk.
For lunch I have either salad w/ black beans , no dressing and fruit or leftovers.
This week on the menu for supper is :
1.Spaghetti with Turkey sausage and salad
2.Shredded chicken fajitas, chilicorn and salad
3.Veggie burger (no bun) , german potato salad and broccoli
4.Spag and spinach with zesty white beans and tomatoes
5.Spaghetti squash stir fry with Veggie pancakes and egg drop soup
6. Veggie and bean chili with garlic bread

Nothing fancy but hopefully it all will be tasty.

I don't plan too strictly, because I enjoy buying groceries at the market and seeing what's there and what my favorite merchants have on offer that day.

But I do plan per day! That brie and apple sandwich sounds delicious, and if I were you I'd make that my main meal for the day, and eat a very sensible (blah, boring) breakfast and plan a very light dinner. I know that that's not the ideal approach, but damn, sometimes a girl's gotta do what a girl's gotta do.

For this week my plan is to go out for lunch either tuesday or wednesday, which means I will be having the most delicious grilled chicken, (creamy) curry sauce and sprouts on a pita roll. That day my dinner will be a big fat salad with chick peas and lots of veggies and light vinaigrette.

I want to eat more fish, so tomorrow (monday) and thursday will be fish days. One day for oven baked fillets with rosemary and capers and anchovies and grilled lemon, one day for either sushi or salmon. The vegetables will depend on what my favorite market lady is willing to cut me a deal on.

In the mean time I will have to find a way to use up half of a gigantic eggplant, so I'll either turn that sucker into a curry, or grill it and make a low(er) fat baba ghanoush to have with crudités as a snack.

One day will be the obligatory "finish what's in your fridge before it goes bad" day, so that will most likely be yet another incarnation of vegetable stew.

I am making up a batch of hummus and a batch of tzatziki tomorrow to serve as dips for raw vegetables. That will be my snack of the week. I also have some fabulous chestnut honey, so I'll get some fruit to dip into that for sweet snacks. I'm not really a fruit person (if it's not fermented I don't really see the point), so the fruit snack plan will be an experiment.

I passed up a Chili's hamburger (which are my favs) for a boring chicken sandwich.

If I can do that, you can restrain yourself from the apple brie sandwhich (though, I probably wouldn't because it sounds pretty damn good.)

today I had eggs and a morningstar farm griller for breakfast. very hearty!
lunch: spinach, apple, walnut and blue cheese salad.
snacks: celery! (as rec'd by workandplay) and a protein shake with blueberries and banana
dinner: a mix of black beans, mango, tomatoes, the last bit of broccoli, and avocado, over a *small portion* of polenta.

Monday:
dinner: japanese eggplant and tofu in spicy garlic sauce. over a wee bit of brown rice. not sure how to make that yet though!

Tuesday - Thursday I'm worried about because I'll be traveling. and the hotel where I stay has this absolutely amazing grilled brie and apple sandwich that I don't think I can refuse. I'll try and eat super healthy all day so I can at least indulge in half the sandwich! I think I'll try for eggs in the morning, fruit for snacks, salads and black bean soups for lunch, and then tomato soup and salad (or half of the amazing grilled brie and apple) for dinner. wish me strength!

I'm sitting down today to plan out a couple of meals. I try to do at least a couple each week - though I don't always stick to them.


I have some Italian sausage I need to use up so I think I'm just going to make sausage with peppers and onions with those.

And I'm going to make some "real simple" black bean soup - which is basically 1 can drained black beans, 1 can refried black beans and 1 can chicken broth mixed with some pico de gallo. Easy, healthy.

And maybe some more fish this week. Last week I had some pan fried tilapia that was fantastic.
