The hamburger soup and garlic biscuits were so good. Even my son ate some of it leftover and my daughter scarfed the leftover biscuits. I can't remember the last time I've made homemade biscuits.

Made baby back ribs for dinner last night. First time in I can't remember when that I made them. They aren't the healthiest because they are covered in BBQ sauce but they were so good. Slow cooked all day on 200 degrees, they just fell off the bone.

Brenda, it was called Thai Coconut Chicken. My kids are rarely home these days but my son did eat it. Publix puts out different Aprons meals every week. They are usually back in the meat department. I have tried several of them and have liked all of them. This was the first time I tried a slow cooker one.

Last week I fixed a Publix Aprons Thai Chicken Slow Cooker meal. It was delicious! It was enough to feed 4 people and everything you needed was included. The veggies were all diced up and ready to go and it even came with a bag to line the slow cooker so I didn't even have to wash the slow cooker when dinner was done. Everything went into the bag and cooked for 7-8 hours. Only extra thing I had to do was heat up the jasmine rice for 3 minutes in the microwave. Doesn't get much easier than that.

So one of the THM recipes the other day - I tried it and it was very good, every one loved it and it was so easy.

Take about 2 1/2 to 3 pounds pounds chicken - boneless breasts and thaw

Place thawed chicken in crockpot with 20 oz of salsa.

Cook all day on low. We shredded ours and made burritos with brown rice, black beaks, shredded cheese and lettuce.

As far as recipes go, we generally speaking oven-roast our vegetables -- always yummy!


Also for salads, enjoy rummaging the fridge/cabinet to find random items to add; which does a lot for overall taste, appearance, nutrients & so forth.

Remember you don't need a full serving to get a good dose of needful vitamins/minerals.

emoticon I re-read some of my initial highlights from the THM book and trying to go back and imbed more of the knowledge in my head. Increased my time between meals and the weight is starting to come off, my clothes are already feeling looser and I am feeling better. Added the B Complex and about half way through the bottle and feeling like it's working on my metabolism. I also am listening to THM podcasts and using my time to educate on multiple things and when possible through listening as much as reading since I can be driving and still learn.

I'm trying to eat according to the Trim Healthy Momma way which includes all of God's foods and everyone adjusts based on their own health and history. The main thing is fueling every 3 to 4 hours, which just that mindset itself has been a huge help.

Made Italian Meatballs from this website last night and my husband loved them. They were low in carbs, higher in fat so an S meal for those interested but still healthy ideas and they have full week plans on here for FREE!!!

the last few months we have been buying Publix Apron meals to try something different once a week. Last night it was Chicken Pomadoro (or something like that). I was very flavorful but this is the first one I have made that was lighter on the amount of food. They all serve 2 but usually there is plenty. Last night I felt like we needed rice or something to add to it. I guess that was because this one came with gnocchi which would have very small portion sizes because it is a type of pasta. So far every Apron meal we have tried has been delicious.


Brenda, maybe ground chicken would work in place of turkey for you?

Two nights ago I had some ground turkey thawed out and wondered what to do with it. I ended up throwing together some sloppy joes. All the amounts are approximates because I don't measure anything. I just toss stuff in together.

1.5lbs ground turkey
1 small can tomato paste (2-3 cans water also)
2 Tbsp Sweet Baby Rays Barbque sauce
1/4 cup Sugar Free Pancake Syrup
2 Tbsp Organic Brown Sugar
Garlic, salt, pepper, and parsley to taste.

They turned out really yummy and we ate them with Broccoli Veggie Tots.

I fried up some cabbage and bell peppers with celery the other night, just thought I would try it and it was so good. Fairly simple and a great side. My husband loves cabbage. I used a little bit of olive oil and then added Dill and a little bit of SOUL seasoning as well.

My first quiche was so good that I whipped up another one on Tuesday night. This one was Shrimp and potato. Probably wasn't the healthiest dinner but it was so yummy. Super simple too.

I used a Pillsbury refrigerated pie crust and pre-baked it in a 400 oven for 5-10 mins. While the crust was baking I cut up creamer potatoes into thin strips and diced some onions. These were tossed into a skillet with a little bit of garlic herb olive oil and sauteed for a few minutes, adding whatever spices I desired. I tossed in some medium shrimp and let this mixture cook until the shrimp were done.

While the shrimp and potatoes were cooking I whisked together 5 eggs, 1 cup sour cream and 1/2 cup milk.

When the shrimp mixture was done I placed it into the pie crust and sprinkled with shredded cheese. Poured the egg mixture on top of that and topped with a little bit more cheese. Baked everything in a 375 oven for about 30 minutes or until the eggs were set.

My hubby and I bought a Publix Aprons Meal Kit last week when we were grocery shopping and boy oh boy was it good!! We bought Maple Mustard Pork and it was so easy to prepare. Everything is already prepped so all you have to do is cook it. The meal kits serve 2 but there is plenty of food there so you could probably stretch it to 3 or have some leftover for lunch the next day.

This recipe is what I asked for as my birthday dinner. My mom made it and oh my goodness!!! It was so good. My daughter had to work so she and her boyfriend were coming by after the rest of us had eaten. They almost didn't have any dinner because this was so good. I had to cut everyone else off (my hubby eats alot) and make plates for my daughter and her boyfriend and set them aside just so that they would have some food. This recipe is amazing and easy to make.

Liver is gross and my kids have never smelled or tasted it because I refuse to fix it or eat it. LOL
My mother used to fix liver once a week because my dad loved it and we had to eat it. I won't do that to my kids.

When they were younger I insisted that they take just one bite of something new and usually they liked it but if, after one bite, they still didn't want to eat it I didn't force them. Didn't stop me from putting it on their plate in the future though. They are teenagers and I still put vegetables on their plate in hopes that they will eat them.

My parents tried to do that to me with Liver. Liver, if you didn't know, has a very distinct smell to it when it is cooked... So gross....

My son rarely tries anything new these days. I have to bribe him just to try something new and usually, he ends up liking it. I hope he grows out of that phase.

funny how they can almost always tell. We laughed earlier this year when we had dinner at my moms and she made Shepard's Pie and used cauliflower potatoes. We call them "faux-tatoes" and have been giving them to the family for years. My oldest son, now 23, heard us call them faux-tatoes and was like "Faux-tatoes are actually cauliflower? I've been eating cauliflower all this time?" We laughed so hard because he doesn't like cauliflower. He went back for seconds though.

April, this sounds wonderful. I love butternut squash so I will definitely have to try this recipe out. I wonder if I can sneak it past the kids? My daughter likes butternut squash but my son doesn't like any kind of squash.

I have been off Spark for so long I never saw this page. I will add to it! My mom and I tried a recipe that we fell in love with from Weight Watchers and have made it, at least, 4 times now.

Butternut Squash Mac & Cheese:

Ingredients:
2 Cups of low-fat milk
10 oz of elbow macaroni
1tsp of salt
1tsp of Dijon Mustard
1/4 tsp of Onion Powder
1 pinch of ground nutmeg (we always leave this out)
]8oz of water
10oz Pureed frozen butternut squash (we find it at Publix, can't find it at Walmart)
4oz of Reduced fat sharp cheddar cheese
1Tbsp of chopped chives (for garnish)

Directions:
1. In a large Dutch oven or soup pot, combine milk, macaroni, salt, mustard, onion powder, nutmeg, and water. Cook over medium-high heat, stirring constantly until small bubbles begin to form around edges. Reduce heat to medium-low. DO NOT LET THE MIXTURE BOIL

2. Continue to cook, stirring frequently, until pasta is almost tender and liquid is the consistency of sauce. Stir in the squash and stir 1 minute more.

3. Remove from heat and add cheese a handful at a time, stirring until fully melted before adding more. Serve garnished with chives.

Serving size is 1 cup
and it makes 6 cups.

It is a nice dish to eat on a cold night.

I tried a new recipe last night. It was a one skillet meal and it only took about 30 minutes. I found it in the latest Cooking Light magazine. It is called Braised Chicken and Grapes. Made something new last night. It was a skillet hash that contained butternut squash, brussel sprouts, and chicken. It was really good. Neither of my kids would even give it a try. I understand that brussel sprouts are an acquired taste but they were easily picked out if they didn't want them. They could have eaten the rest of it. Teenagers! Sheesh!

So I remembered to grab my frittatas to take to work this morning for my breakfast. They turned out really good. I was worried about them being good reheated but they are still really tasty. You don't need to heat them all that long, about 40-50 secs for 2 of them. Only 168 calories for 2 of them so it fits into my daily limits.

Hubby and I picked out 3 new recipes from my Cooking Light magazine to try and bought all the ingredients while grocery shopping yesterday. This morning I made some Bacon Broccoli Frittatas that I found the recipe for on the Cooking Light website. I plan to use them as breakfast during the week so I am not tempted to visit the cafe downstairs and eat a bagel or blueberry muffin instead. I will post the recipe after I try them tomorrow. It was very quick and easy to make.

I created this forum so that we have a place to share with each other the good, healthy recipes that we love. I know I find myself often falling into a food rut and it's easy to make less healthy choices when you get into a rut.

I challenge you to try one new recipe a week and share the recipe and the experience of making and tasting it here. Was it easy to make, did it taste good, are there things you would change about it, would you make it again?

I challenge you to try the recipes someone has posted and add your thoughts also.

I am posting the link to Almond-Orange Cabbage Bowls that I included in another feed last week because it is that good. I would definitely make it again.
