I like them cold, but I was always an odd child LOL
I also like them reheated, and that doesn't destroy the changes so you're good to go!

I have seen and heard on Dr. Oz, too, and maybe The Doctors TV, that if you boil potatoes, especially the sweet potatoes, then refrigerate them it does something to the starch to make it resistant. I don't understand that, really, but maybe I will try doing that. Then I can just reheat them I think. Don't think I would like them cold.

Oh, hon, no worries. Sugar and starch are both carbohydrates anyway, so you're right either way! emoticon
There are a lot of other articles, this was just one of the easier ones to understand. I think it's one of those things where all the information isn't available yet, because the powers that be are still researching it...

Kathy, it might have been resistant starch that he said. I couldn't remember the exact wording (I have a terrible time remembering words. You can often look at my posts and see that I will try to describe something instead of using the word.) I had just heard about them before, and had heard that bananas had more sugar when they were ripe than when they were green, but I never heard before that they were resistant starches before or that they wouldn't affect your blood sugar.

I'd never heard of a resistant carb but it seems like it's sensible but possibly just another fad. The advice seems fairly straightforward, and I think I'll ask my endocrinologist and my nutrition specialist what they think. Might even try it myself!... but cautiously! LOL

Can someone tell me about resistant carbs like what they are or how they are absorbed and how they affect blood sugar? I was watching Just Eat This and Rocco said that if you eat green bananas they have resistant carbs and not absorbed as much as riper bananas. I know that the riper ones are suppose to have more sugar in them. He had showed how to make a milk shake or smoothie with them. I watch his program sometimes because he often shows how to reduce carbs, fat and calories in different dishes.
