Enjoy seeing these ideas. I'm usually not hungry at lunchtime, but when I am I usually have leftovers or soup. I have a bit of fatty liver, so was reading what is helpful for liver health and got a few veggies to try. Will try nuts, too, if I can chew them. I tried some salad the other day, but couldn't get it eaten at that time. I will have that sometimes, though.

I have a relish tray in my refrgerator that I keep full of cut veggies so I can throw together something resembling a chef salad whenever I'm at a loss for lunch. Remember, salads can include fruit too in small quantities. A tablespoon of dried cranberries, for example... they work great for impromptu homemade soups, too. Plus I also keep my own version of trail mix on hand: raw almonds, raw walnuts, roasted peanuts, cashews, whatever is on sale...all of which I buy in bulk at the local Winco... AND It goes great on salads too! LOL

Don't forget, you need a little bit of fat to absorb some of the vitamins in veggies, so look for healthy stuff like a nice raspberry vinaigrette made with extra virgin olive oil...

P.S. I looked up enthusiasm, and it says the root words mean God within... interesting...!

Ralph Waldo Emerson said 'Life belongs to the energetic.' But you don't have to be frenetic and hyper--some energy is quiet and steady, like a heartbeat... and that works too! LOL

I like veggie lettuce wraps...actually, anything wrapped in lettuce.
Also, whole wheat crackers with cottage cheese and pineapple or crackers with avocado..
Soup and salad is always good.
I make a wheat berry salad. I think it's in SP Recipes. I'll have to check..
I found it ! Very good, you can add whatever you like... And it's great to take with for a party or pot luck.
