Pat: you hit on an important point -- it is best to pair carbs with a protein. That helps curb the blood sugar spike.

I cannot eat a whole apple either. But that's all right. 1/3 to 1/2 will do!

I usually eat half an apple and save the other half for lunch or afternoon snack. I pair it with a babybel cheese. I usually only eat half an apple because the grocery stores here only have really big apples. Now for bananas....I love them but can only eat about a third of one at a time. Really drives my BSs up!!! emoticon

If you really like apples and want to indulge, a smaller portion is definately the way to go.

Good luck to you.... and let us know what happens....

I'm thinking I will try again, and try just 1 oz. Maybe if I wanted to add them in my salad. If not occasional would be the way to go. Thank goodness I absolutely love strawberries.

Hmmmm . . . Usually if I have apple, it's down within 2 hrs. But everyone is individual. For you maybe apples are just an occasional thing. I know my blood sugar does much better with the berries -- strawberry, blueberry, raspberry or blackberry.

I love Apples, but have been staying away from them. I keep most of my fruit choices to Strawberries mostly and then some blueberries. Today I experimented with an Apple. Not to get caught up in size and amount and proper judging, what's a large, what a medium. I made it simple, I chose a prepackaged Mott's Apple Slices.

Lunch was Turkey Roll Ups - 4 Slices of Blackbear Turkey Breast 4 Slices of Aurricho Cheese Tablespoon of Mayo, and the Apples. I was specifically checking to see how the Apple would affect me. I see that it raised it, and it did come back down, but it took a bit. Do you think this is normal up and down process, or do you think it took to long to come back down. I don't typically test so much, but at this time I was specifically checking to see how it was coming down. My lunches tend to be larger lunches, as I work late, and only have something light when I come home.
