Eileen, I usually substitute the canned soup with making your own, you could use broth and fresh mushrooms and thicken the soup for the texture... Hope this helps...

Don't used any canned soups at all. Wonder if one could substitute fresh mushrooms and broth in which the chicken was cooked possibly with a thickening agent to make this. I also would use fresh broccoli rather than frozen--wonder how that would work. It looks really good so would like to try something similar.

Chicken and Broccoli Casserole

A quick and easy dinner that is also low in fat, this chicken casserole is perfect for busy nights.

Minutes to Prepare: 15

Minutes to Cook: 20

Number of Servings: 4

Ingredients

1 pound boneless, skinless chicken breasts
1 (10-ounce) package frozen broccoli spears
1 can lower-sodium cream of mushroom soup
3 tablespoons fat-free mayo
1 cup reduced-fat shredded cheddar cheese

Directions

Boil the chicken breast until done and drain. When cool enough to handle, cut into 1-inch pieces. In a square or round casserole dish, mix mayo and soup. Add broccoli and chicken and mix well. Sprinkle with cheese. Bake at 350 for 20 minutes or until cheese is melted. Serves 4.

Nutritious Strawberry Smoothie Shake

Ingredients

1/3 cup frozen low-fat, sugar-free vanilla yogurt
cup crushed ice
cup skim milk
6 large fresh strawberries, stemmed and cut in half
teaspoon vanilla extract

Directions

In a blender, combine the frozen yogurt, crushed ice,and milk, turning the machine off and on several times until blended, about 1 minute.

Add the strawberries and vanilla. Blend for another 30 seconds, until strawberries are finely chopped.

Pour into a tall glass and serve with 2 straws, if desired

114 calories (4% calories from fat),
5 g protein, trace total fat (0.1 g saturated fat),

Traditional Irish Soda Bread


READY IN: 1hr SERVES: 8
Makes 1 loaf

INGREDIENTS

4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/1/2 cups buttermilk start with 1 cup and if need you can add half cup more, follow step 2
Instructions

DIRECTIONS

Heat oven to 425 degrees F. Brush a baking sheet with melted butter or spray with non-stick spray. I use non stick spray, works great....

1. Combine dry ingredients in a deep bowl.

2. Gradually stir in 1 cup buttermilk, beating constantly, until dough is firm enough to be gathered into a ball. If dough crumbles, add up to 1/2 cup more buttermilk, 1 tbsp at a time, until it holds together.

3. Place on a lightly floured board and pat into an 8-inch flattened round loaf.

4. Place loaf on baking sheet and slash a 1/2-inch deep "X" into the top of the dough with a small, sharp knife.

Bake at 425 degrees F for about 45 minutes, or until the top is golden.

Serve hot. Bon Appetite!

Thank you Judith for the recipes. I will try the Fried Green Tomatoes and hope I like them. I know tastes change over the years, so maybe I will like them as an adult.

I am sure I will have some recipes to share over time.

Good Morning Team,

This new thread is for you to share your recipes with all of us. It can be anything you enjoy to make. Smoothies, Breakfast Foods, Lunch Dinner, Muffins, Snacks, you name it.

I look forward to checking out some new recipes...To get you started; here are a couple Tomato Recipes... Bon Appetite!

Stewed Tomatoes

2 quarts. tomatoes, cut in chunks (if using fresh tomatoes)i.e. 4 cups = 1 quart, use as many chopped tomatoes in chunks that fill 2- (4 cup) measures... (Using Food Scale is Best)

4 tbsp. green peppers, chopped

4 tbsp. onions, chopped

6 tbsp. celery, chopped

2 tsp. celery salt

2 tsp. sugar

1/4 tsp. salt

Note: Measure all ingredients after chopping. Mix all ingredients in very large pan. Pack into clean quart or pint jars to 1/2" of top of jar. Put on cap. Screw band firmly tight. Process in water bath cooker for 45 minutes. NOTE: Start timing after water begins to boil.

Note: you can use your whole tomatoes you prepared for freezer and make a smaller serving for your family, you can add more spices, garlic and other seasonings to your liking...celery salt is really a must for flavor...

I make my stewed tomatoes as I need and also use mine for chilli, stew and even stir fry's... Bon Appetite...

Fried Green Tomatoes.

If you can find it, use fine white cornmeal, which is the primary cornmeal used in the South but the yellow cornmeal is just fine too. Buttermilk adds flavor and tang, but is not strictly necessary.

Prep time: 10 minutes Cook time: 20 minutes Yield: Serves 4 as a side dish

INGREDIENTS

3 medium, firm green tomatoes

Salt

1 cup all-purpose flour

1 Tbsp Cajun seasoning (optional)

1/2 cup milk or buttermilk/ (yum yum)

1 egg

1/3 cup cornmeal

1/2 cup fine dry bread crumbs

1/4 cup peanut oil or other vegetable oil

METHOD

1 Cut unpeeled tomatoes into 1/2 inch slices. Sprinkle slices with salt. Let tomato slices stand for 5 minutes. Meanwhile, place in separate shallow bowls: the flour and Cajun seasoning (if using), buttermilk and egg, and bread crumbs and cornmeal.

2 Heat the peanut oil in a large skillet on medium heat. Beat the egg and the buttermilk together. Dip tomato slices in the flour-seasoning mix, then buttermilk-egg mixture, then the cornmeal-bread crumb mix.

In the skillet, fry half of the coated tomato slices at a time, for 3-5 minutes on each side or until brown.

Set the cooked tomatoes on paper towels to drain. These fried green tomatoes are fantastic with a little Tabasco sauce. Bon Appetite!

Green Tomatoes for Freezing

No prep needed just wash green tomatoes place whole in plastic freezer bags and use as needed for yummy fried tomatoes, I have even used them in stir fries and other dishes...enjoy...
