How nice to read that some of your husband’s are thinking of trying keto…… Perhaps after our checkups next month, my husband might also consider it?

It was raining most of the night here in Rochester. But we did get a decent bunch of trick or treaters. The leftover candy is not really a problem for me. I kinda agree with Karen that they are just colored papers.

MARIENOW: I’m right there with you. Hot dogs are one of the easiest meals to prepare. Although I’m thinking those chicken thighs Karen suggested will be real easy too!

IWANT, that would probably turn my stomach a little. Its weird because I would have thought the ones with additives would be more greasy. I cook mine in the oven at 350 and I leave them in a while because I like them charred (is that a word?) like they get on a BBQ grill. So any liquids coming from them are probably burnt off by the time I see them.

I'm eating the Oscar Mayer ones too and before that it was Nathans. I have been eating them more and more because like you have mentioned before, they are very convenient and easy. I look forward to them lately. I'm completely used to eating them without a bun now. Sometimes I cut them into bite-size pieces and put cheese on top to melt, like little appetizers. I wish all meals could be that easy. :)

MARIENOW: I fine that the uncured hot dogs are kinda greasy and when I microwave them in a paper towel, they ooze reddish……. Taste isn’t bad though.

Sorry team, I have been MIA....adjusting to a slightly different schedule. I don't have time to read the entire month, but I caught afew things.

James, I hope your wife is recovering well now and gets to come home. I'm sorry she is having a lung problem, no fun at all!

KD, maybe there is hope for hubby on keto WOE? My husband told me yesterday he wants to try keto. I don't put pressure on him but happy he is willing to try. He won't be as strict as me because he refuses to give up diet soda, so artificial sweetners are staying on his menu. So we shall see how he does.

Oh KD wouldn’t that be great if your husband was keto too!!
I get no one for trick or treat. I carve a pumpkin and put it out. I buy one small bag of candy I don’t like much (kit Kat this year) and after the day send it all to my guy in Denver. I miss seeing the kids in their costumes. But think of all the money I save..
Last year a neighbor who had moved called and said she knew how much I’d enjoyed her kids coming did I want them to., I said oh YES!! And was happy to have them.
I bought a small steak for supper tonight. Gone are the days of pumpkin faced pizzas or “bone manicotti” ( something I made up when the kids were little..manicotti stuffed with a mozzarella/ricotta mix and mushrooms to hook like joints stuck in the ends) or mummy dogs.
Oh well. Life is better now but those days sure were fun!!

We live in the city - we will be hosting kids all night long weather permitting. We have candy - but this year there's no problem. It's just brightly colored paper to me.

It's just my husband and me - so I usually make a recipe for 4-6 and we have it two or three times. That saves me from cooking all the time. Last night I ate a small piece of a pork chop (my husband couldn't finish his) and a bowl of Cream of Mushroom soup (thanks Holly) and a very small salad. I am still not hungry this morning.

Keto satisfies. It's not something you go on and off of - it's just something you do. The longer I do it, the less it seems onerous to me. The easier it gets to integrate it into everyday life.

And by the way - after my labs, my husband MAY try it now!!

JAMES, I hope your wife is able to come home soon from the hospital.

I do the same thing with foods. I usually eat the same everyday until I move on to my new favorites. Now I am eating a lot of pork sausage with just a little green pepper fried. Also made a dozen deviled eggs (they are "Bombs" because I added butter to the mayo).

I don't like to eat pork rinds out of the jar but I do processed UTZ pork rinds into fine crumbs. I use them to bread shrimp or pork chops and then fry.

Since we are in the country and not near town we won't have too many kids Trick or Treating tomorrow. At the most 15 kids. We don't buy candy because we just never know if any kids will show up. We just give them all a $1.00. It would cost me more money to buy the candy and then it all sits here. So I never do that to myself. The kids love it.

Those little pizzas look very good.

Holly, glad you got the hose back!

IWANT, about uncured meats, to me, they taste the same. So I figure I might as well get them because I can avoid nitrates. I'm not as worried about the other stuff like salt or even a tiny bit of sugar (for me personally), but the nitrates I've been told are really bad.

Elizabeth, the blueberry muffins sound SOOO good, I'm literally drooling at the thought of them.

I do the frozen bag thing too. Today I chopped up stuff to make omelets (ham, peppers, mushrooms, onions) and put about 6 little bags in the freezer. They are very tiny amounts but it makes eggs seem a little more special. I used to eat sausage and eggs A LOT, then I moved on to deviled eggs. Now I'm on an omelet kick. I add cheese when I'm cooking.

today i got up, looked at the calendar, and rememebered i always make roll out cookies and pumpkin bread for halloween. only...no.
so i thought..i know i've seen some recipes for keto pumpkin bread online. so i went searching. problem is, they ALL are 8 or 9 carbs a slice. sigh. so. no cookies. no pumpkin bread. i have some pumpkin ice cream left..that will have to do at 3 carbs in a serving. not what i wanted, but its all a choice, right? and i choose not to spend my carbs on something so little for so many carbs. but i sure am not happy about it.
I guess some traditions need modifying...

I know these look disgusting, but honestly, they were pretty good! I tried the "butter in skillet" method instead of the oven and the "mini pizzas" came out much better.

Because they are small, the center lifted a bit so the cheese ran down to the sides. I thought, "uh oh"....but this was actually GOOD because it made the edges very crispy. It was a cheesy, pepperoni taste. The crust was much better than the oven. I actually woofed them down. :)

I took a pic so you could get an idea about the size against a fork.

James I hope your wife is improving at a fast clip and is home with you soon.

Holly check out Craigslist, eBay, Amazon... you'd be amazed at what you can find. Too bad you have to pay for it though.

Elizabeth I would imagine you have a little bit more flexibility with carbs now that you are so close to your goal. Those muffins sound great. Some days I just miss carbs with coffee.

IWANT you can also make an egg muffin with veggies that is super low in carbs for a daily meal.

Yikes 9 carbs are half my entire day. sigh. i dont do fruit, either...except the occasional raspberry or blackberry. I do miss blueberries but just too hight for me!!

I will be going out soon to take my girl for a walk. she has a severe cardiac condition so we only do a mile at a time. but its the only day this week without snow or rain, so we are doing it!

Nightskystar- that is too bad about the gas grill hose!! I do hope that you can find a replacement and get it going!

James - So sorry about the delay, I am sure it is difficult, but it is good to hear that she is getting better slowly.

Iwanttosucceed - the muffins that I make are a low carb blueberry muffin made with almond flour and flaxseed meal. They are pretty good, and have 4 net carbs per muffin. I know some don't do the net carbs...in that case there are 9 total carbs.

It is so nice out today I feel like I should have gone for a run, but I opted for a strength type workout instead. I will run tomorrow.

James so glad things are looking up with your wife. its always harder on the spouse or caregiver, i think.

folks if i answer something weirdly, my apologies. I keep seeing HollyB..and i'm HollyB too, and people actually CALL me that all the time. (My corporation name is HollyB..LOL)
so if i answer out of turn..you know why..my apologies..and also to the other HollyB!!

I just had my stepdad and his friend deliver me a new (to me) dryer, and my folks old gas grill. while they were installing the dryer, two guys stopped and asked if they could take the old dryer and gas grill. it saved the men here a lot of time, so i said sure..and they were happy..the metal guys were happy.

Then they put the tank on the newer gas grill. uh oh. the regulator hose leaks. bad. so..i now no longer have a gas grill :(. bummer. i cook on it most every night, even in 20 below weather and 3 feet of snow. too bad they took the other stuff...i could have gotten the hose off mine..it was good. and they dont make this grill any more..so i dont know if i can match it. double bummer...

Kathleen, Yes I agree. Eating the same foods everyday used to make me think Id get bored. But knowing Ill feel full and satisfied threw that negative idea out the window. Planning out meals also leaves the question "what do I have to eat" out the door. I roasted two chickens, de-boned, and put in individual portions. Baked some bacon, in freezer for whenever I want.
Hard boiled eggs always at the ready. Little things like this keep me on track.

Enjoy time with the grandchildren! Good time to do crafts and be creative with them. They can make their own Christmas gifts, taking photos to frame for Mom and Dad, or using their feet and hands to make creative painting collages, Special times.

This is Not a diet, it is a new healthy lifestyle.

This is a very hard emotional situation for me. My wife's return from hospital was delayed once, and the now the new tentative date will probably be delayed again.

In general she's getting better, but its very slow.

I eat things that are not "pure". My meat is not free range grass fed (though that is probably slightly better). I buy cheaper regular meat.

I really haven't paid much attention to what is in the cold cuts that I eat. But if one is thinking about those things, my suggestion would be that if you can't pronounce the additive, then don't buy it. For example, if the label lists "smoke", then though burned things have a range of chemicals that come out, you can pronounce "smoke", so that is probably fine.

But if the nutrition list has for example dimethylnitrosamine, then you might want to avoid it.

Never got a chance to check in yesterday. Looks like today is going to be a half decent day weather wise, I think its time to get the patio furniture put away. Had tons of rain last night!

Kathleen good job stayin on plan during your quilting weekend. I am totally a meal repeater as well.
HollyB - great idea to cook up some things and put them in freezer bags. I did this with my muffins and my cookies. When I want them I just grab one and put them back.

Gotta look for those Oscar mayer hot dogs!

The soup was delicious!! We had a small side salad, and also I sliced thin and refried the pork belly. I really enjoyed it crispy too!

My boarder is back. Hopefully she moves into her apartment on Thursday. She's sick, so is on quarters for 2 days so she will be here 24/7 for at least 2 days. Sigh. Just when I thought it was good to go...

good job Kathleen and a quilting weekend sounds like such fun!!!

KD i made the mushroom soup last night!! i did half a batch..should last me 4 nights. also bought a bunch of marked down meat (mondays are the BEST...) i got thin sliced pork for schnitzel, beef flank steak for a dollar, and some chuck steaks, and 3 marrow bones for me girl!!

curing..here is the definition :

Curing is any of various food preservation and flavoring processes of foods such as meat, fish and vegetables, by the addition of combinations of salt, nitrates, nitrites, or sugar, with the aim of drawing moisture out of the food by the process of osmosis.

so..theres nothing added to uncured meat. no salt no nothing. its just..well..raw meat. no difference in the fat content.

Glad you had a good weekend Kathleen!! What did you get done? Have any pics?

I also agree easy is best, but I like to have variety once in awhile. Today I'm making Holly's Mushroom soup - can't wait. Will also have some other stuff too.

Yesterday I made salmon and brocco/cauliflower, but my sister loved it so much she asked if she could take all the leftovers home. Okay - so new food tonight!

Once in awhile I have extra carby veggies (beets/squash) and I try and go really low carb to take into consideration those carbs. Should be okay today.

Hello Everyone. I am back from my quilter's weekend away.
James I am sorry to hear that your wife is ill. I hope she is quickly getting better.

The weekend away went really well as far as staying on Keto. I brought foods that were Keto with me and shared. It was so easy. I just skipped the bread and all carby foods. I managed to stay dairy free and did pass on all the desserts and the chocolate Martinis. The first night they had pizza delivered but I just had a large salad and a hard boiled egg. My weight stayed the same so that was good, no gain.

Today is getting back to normal and doing laundry. Next week I am away again babysitting three grandchildren for one week while their parents (my son & daughter and their spouses) all vacation in Jamaica.

I also tend to repeat my meals. I think it makes it easier to stay focused. If I need to think every day for something new and different I could never stay on this Keto plan. Keep it simple and easy for a few weeks. Make it a no-brainer meal plan. Easy grab and go type foods. That is what is working for me.

I also baked some bacon and put in freezer bags so I have it ready at any time. Being prepared and planning ahead helps with my success. emoticon

on pork belly..its just uncured bacon. thats it.

most butchers keep it frozen, as most customers want it sliced so they can cook it in strips like bacon. i go in and ask for 2-3 pounds and either roast (bake) it in the oven or, more commonly, i put it in the smoker with hickory and apple chunks and oh man is it ever good!!

Marie that's a great idea about repeating a good keto day from a few weeks ago for IWANT!

Yes I cooked the pork belly in the oven. I bought one strip (about 1-1/4 pounds) and it cost $4.50. I figured just to try it... I smothered it with salt, and then cooked it until it was done. I used a meat thermometer. I think 145. It's very rich of course, but yummy. I think I will cut a chunk off and pan fry it to get it warm and crispy and eat the rest of it as a condiment for a meal.

You know when you're cooking meat, if you stop just before it's done it finishes with residual heat (what's on the pan) and you might have less overcooked meat that way.

IWANT, thanks for the suggestion about using butter in the skillet. I never thought pizza could be cooked that way. I will try that with the next batch.

About getting off track....(I can't give suggestions, but just thinking out loud)......I'm wondering if maybe you could pick a day from your tracker from maybe 3 or 4 weeks ago and just focus on eating exactly what's listed there for one day. It would take the decision-making process out of it. Once you have a day complete, you will be fine and back on track. Don't think about anything else except repeating whatever you have listed on your old tracker, even maybe eating the former hot dogs you liked. For me, I find that when I change anything, even the tiniest thing, it can sometimes throw me off. Plus, you had a big change in scenery with your trip, so it was a different situation to adjust to and took you out of your comfort zone. Even though it was fun, sometimes it's difficult to adjust to another environment in the beginning. Remember though that you're doing great and it's only a matter of time before you are back on track. I'm 100% sure of that.

KD, did you cover the pork in the oven? It's funny because I've never heard of pork belly. (Actually I MUST have heard if it, but I never thought about making it.) My meat cooking game still needs work. I'm still overcooking everything. And I'm buying a bunch of meats and noticing how much more expensive all the uncured, non-nitrate ones are. But it feels good to make the switch.

KDGIRL: thanks for the advice. I definitely don't have anything in the house to temp me. I'm actually surprised it is taking me so long to get back on keto. Right from the start, I never faltered or was tempted to eat things I shouldn't. I was on keto for 8 weeks.......

KD thats how i am. it doesnt even occur to me to eat it. but when i was in the beginning and just getting the sugar out of my system it did. while i never faltered from day one, and i have no clue WHY because i could make a reason for eating ANYTHING, somehow with keto it never bothered me. maybe i just felt so much better, even 3 days in, that i didnt want to mess that up.

tomorrrow is my ketoversary. 2 years. wow. never in a million years did i think i could or would!!

I agree - whatever your tough time is - have something planned so that you don't cave. In the alternative, don't have anything around that will tempt you!!

I bought 5 bags of M&Ms and Snickers bars for Halloween. I distantly remember last Halloween - I did eat candy. My sister was still living with us, lots of stress. This year, it's out on the counter and I don't even care. If we go through 5 bags, I'll turn the lights off. If we don't, I'll send the rest to my husband's work. No problem.

What a difference a year makes.

IWANT I had to get back on track many times before it finally took. Just keep at it!

IWANT—3 pm used to be my trigger time, before keto. I started taking my dog for a walk at 3. By the time I got back I no longer had the urge. Maybe plan to be out of the house at your trigger time? Or move supper to then?

Marie.. thanks for the info. And being the tester. On the rare occasion I have pizza I use a crust recipe that does get crisp guess I’ll stuck with it.

Good Morning all:

Sadly I am not back into the keto WOE. Each day, I start anew, then somewhere between 4pm - 6pm, I get uncontrollably hungry and start eating stuff I shouldn't.

I know I can do better and will do better. It has only been a few days, but I want my KETO back!

MARIENOW: hi – and thanks for thinking of me with those frozen products…… Yes, I have tried the pepperoni pizza – they sell it at my local CVS (which I think is weird). Not the best, but certainly nice if I want some pizza.

Try putting the pizza into a frying pan with some butter. Cover it so the whole pie melts up. The bottom of the pie will get very toasted this way.

NIGHTSKYSTAR: Holly, they aren’t that big, but certainly ˝ pie with a small salad is a nice lunch.

Each serving is 4 mini-pizzas (120 grams). You get 2 servings per box. They are small but it was enough for a snack.

I didn't like them very much though. The crust never got crispy at all. I followed instructions to keep them on the cardboard and place them on a baking sheet. But after tasting them, I put them back in the oven directly on the rack. That didn't work either. If there was a way to make the crust at least a little bit crispy that would help.

Maybe their enchiladas would be a better choice since it's basically the same chicken and cheese crust for the tortilla but it would be okay if they are soft.

IWANT, we were talking about frozen food once and I just saw these products today for the first time.

Have you all tried them? I have the uncured pepperoni mini-pizzas in the oven right now. The crust is made from chicken and cheese. They were $5 so I only bought one package in case I hate them.

I was excited to see something so low carb in the frozen section.

Don't worry about the length of your post...

Alcohol isn't listed on nutrition labels very often. It is not a carb, or protein, or fat, it's another beast. But it roughly goes like this:

- alcohol, 7 calories per gram, no impact on blood sugar, but it's a poison, so burn it first

- carbs, 4 calories per gram, high blood sugar is bad so burn this next, after any alcohol

- fat, 9 calories per gram, burn this after alcohol and carbs are gone

- protein, 4 calories per gram, burn this last

It isn't exactly that, but close to it, the body is a complicated thing. But yes, vodka, a calorie source from the alcohol would need to be handled well before you'd dip into body fat.

Hi Lisa!! We have a lot in common..i'm 60 myself and had to give up so much to get this moving..but it was well worth it. i still have days i want things, but its a want not a need, not a craving, and its at its worst fall and holiday time. but i just keep reminding myself that i'm never going to be 300 pounds again EVER.
I also have dogs..well one right now.. Newfoundlands.
And..i live just south of the border..in NY not vt, but so close to where Three Pines would be that i can taste it!!

Holly, let me know when you head for Three Pines. I’ll go with you! I love that series!

I’m relatively new to the group and haven’t posted but have learned a lot about keto just reading this group’s posts. My husband and I began keto the end of August. We lost 10 and 14 lbs respectively the first month and then stalled out. I, sadly, have proven to myself that I do not lose weight when I drink alcohol - even just vodka. I skipped the cocktails this week and BOOM, down 1/2 lb this morning. Hubs, on the other hand, determined he was overeating on Jarsburg cheese. He absolutely loves cheese, but as others have mentioned, it causes, inflammation, and because he doesn’t really have an “off” switch, halts his weight loss. So, we are back to a more strict version of the diet.

Last night we went to a local Mexican restaurant that we enjoy. Skipped the chips and salsa, split a small quacamole salad and chicken stuffed with shrimp entree (complete with gooey goodness on top). No rice, no beans. We left feeling satisfied but not stuffed (like we usually do!). We have both learned that we are satisfied with less with keto.

Sorry for the long post, but wanted to join in the discussion. I’m 61 and hubs is 66 so losing weight had become a pipe dream before learning of keto. Our kids are grown and gone, but we have three German Shepherds that keep us active.

i love her!! the first book is a tad hard to get into. dont give up..If i could conjure up an Armand Gamache i'd keep him for myself. You got Still Life, correct? they just get better and better...not gory or awful on the mysteries, but twists and turns. and i want to live in 3 pines...

James I hope your wife is better soon and things get back to normal for you. Not sleeping is very hard on the body.

I've been doing a bit of extra fasting - trying to get the number on the scale to budge a bit. My appointment with my doctor is today - will see what happens!

Kathleen it is amazing that you are figuring all that out with your sensitivities. I think I am not sensitive much. Never had PMS. Had a few "warm" flashes when I went through menopause but not even worth complaining about. When I got pregnant, my doctor said my HcG level barely blipped. I was "barely" pregnant. haha

Because of all this stability, I think my body doesn't like to drop weight at all. Its status quo is its favorite place to be.

Just a supposition.

Subject: musing on foods that we don't tolerate well

You might think its odd that so many folks in this group have issues with certain foods, especially ones that they like. I like ice-cream and chocolate bars, and as a diabetic that's terrible. I love the foods that are bad for me.

KATHLEEN624 has found that dairy seems to be not so good for her. She's loosing weight, and feeling better after cutting that out.

My theory is that whatever the body doesn't handle well, it tries to deal with by some sort of inflammation. Its like putting nuclear waste deep down in an old salt mine, hoping to never see it again. When you stop eating things like that, you stop adding to that dump site (extra water, extra body fat), but it takes a while for you to clear that up. Like Kathleen is experiencing, quite a few weeks, but feeling slowly better.

So why so many of us on this team seem cursed with foods we don't tolerate? Well, folks that can eat anything and have no perceived health problems won't be looking for a team like. Those of us with issues (excess weight, high blood sugar, bloating, allergies, ...) if they are lucky enough to find a group like this, are attracted to this group, they want to find a way to eat healthier, and get healthier.

You may have noticed that I've not been very active recently. My wife is in the hospital with an infection, not in the lung, but in the lining just outside of one lung. Its bacterial, and from tests they know the type, and have her on a specific I.V. anti-biotic.

Each day is is a little better, but a week ago she was in a lot of pain, had trouble breathing and sleeping. The expected return date is Wednesday.

I've not been sleeping well either. My normal cycle is sleep for 4 1/2 hours, wake briefly, sleep for another 3. But every time I woke at 4 1/2 I stayed awake. Last night was the first night in a week that I got back to sleep for the final 3. I think that means that my inner self is finally convinced that things are really getting better.

Happy Friday everyone!

Well it looks like another typical dreary fall day here. I hear we are in for a load of rain this weekend. We had absolutely no rain all summer so I guess it is welcome. (sort of..lol)

Kathleen I am in Nova Scotia. A very small community where I have actually lived all my life. I didn't move for from home. lol We eat a lot of fish too, love it. Dh is a lobster fisherman and doesn't even like them. I like them but hate cooking them, so I don't ask for them often. emoticon


Hollybarker1 - my latest read was A Man Called Ove. Loved it! I am a reader as well so any recommendations are welcome!


Fortunately I have a stomach of steel, nothing seems to bother it. lol I can pretty much eat anything I want. I invested in a mandoline slicer this week. I love it! Made a zuchinni casserole dish last night that seemed so much like eating pasta. I can't wait to try another one.
