James, sorry for the confusion...my pdoc told me this is part of my bipolar, always being misunderstood because I know what I want to say it just comes out confusing most times.

Yes, Keto has helped my IBS tremendously, but i take the mag glycimate mostly for helping me relax at bedtime and it has the least effect on my gut. I must not take any mag that may have the laxative effect. I took Colestipol for years, but no longer have to depend on it.

I don't quite understand your post. Are you saying you have IBS, and that eating Keto has really helped settled your gut?

That's what I found, and I have ulcerative colitis, and was on anti-inflammatories for many years. Even with those drugs I was often running to find a toilet many times a day. I have the opposite "problem" now, and that is fine with me, its not a problem, its a blessing.

I'll try again. Maybe my problem is that Canada is metric and I had a hard time measuring 2 ounces of cream cheese. emoticon . I'll also leave them in longer... tomorrow.

ok so...my waffles never have holes in them..and they are fat and puffy...and i dont get eggy..did you use enough cream cheese? and maybe use a little more batter?
the recipe, for me, makes 6 waffles. i leave them in longer than i would with regular, because i like the outsides crispy and the inside soft and fluffy.

As for the magnesium, I have to take the glycinate due to my IBS -D. Removing carbs from my woe has really helped with that and any other type of mag, well I would have to live on the throne again...lol.

My thoughts on very low carb (Keto) versions of high carb things, like waffles and bread ...

For myself eating a low carb version of something, like waffles, does not put me on a path to crave more carbs. It tastes good, and that is all. I know that when I eat real carbs that an hour or two later I'm thinking more carbs, and I put my mental foot down in my head. Sometimes real feelings of hunger, sometimes just subtle cravings of anticipated pleasure.

Second thought. Usually Keto versions of something, like these waffles, don't taste like the original ones. Both of these waffle recipies are not the same as a wheat based one. Both different, both good in their own way, but not the same, you won't trick anyone. So just face the fact that it adds variety to your choices, but isn't like the real thing. Accept that eating Keto is OK like that.

I made Holly's waffles and mine, and Holly's bacon, and mine ... OK bacon was from the end of one package and the start of another so it just looks different.

Conclusion. Mine are a little vanillaee (is that a word?), hers are a little eggy. I had a hard time getting mine soft enough, so over time I've added more and more liquid to the recipe to try to counteract that. Hers are soft (or was I doing something wrong?). With butter and syrup on them both good. Holly's have the advantage that they use ordinary ingredients, no commitment to potentially expensive protein powder.

P.S. I almost forgot, Holly's waffle was on the right side, ... yup was on the right side, but not anymore.

Holly: I got the bread from a bakery my neighbor recommended. We split a loaf because I don't want to rely too much on bread items. I'm trying to learn to enjoy meat alone. It's made with almond flour and all approved stuff. Maybe I just didn't put enough butter in the pan, not sure. It doesn't taste like regular bread, but it at least looks like bread, Lol. Yes, I'd love your recipe. I've been thinking about grilled cheese lately. Maybe I'll make that tomorrow with some type of soup. I actually like Boursin, although I like it on Thin Triskets so not sure if I would like it plain. Maybe I'll get lucky and like Brie.

IWant: I don't know how you're getting your fat so high without cheese. Good for you! I still need to try and find those hot dogs you like. I haven't seen them anywhere around here.

and you see it suggesting nutrition in various places. I take this to mean real nutrients, protein, fats, vitamins, ... all the things we suggest here

And:
"Keep it simple—even boring. You don't have to devise complex meal plans that require a bevy of ingredients and equipment. "

I listed a bunch of "tasty" foods, not all of them sweet. The French often nibble on a cheese platter after supper, not a sweet dessert. I have a French influence in my life. One of my daughters was born in France (its a long story), and my wife is German (another story).

I'm about to try Holly's waffles for the first time this morning, I have lots of cream cheese!

iwant..dark chocolate baking chips have sugar! beware...

i would suggest that you fill up on fat, meat, whatever before you do the dessert stuff. that may be part of the problem. many cant have any...it still spikes their blood sugar even if it is sugar free. if you can try doing without even every other day you might see a huge difference!

Marie what did you use for the french toast?
i make a bread that makes the BEST grilled cheese...so i dont see why it wouldnt do french toast, too....let me know if you would like the recipe!

as for brie...i always wanted to try it. i was at a wedding and they had this puff pastry round and when you cut in it had melted brie. i took a good glob of it on a cracker, took a bite and was horrified...i couldnt. i had to find a restroom to rid myself of it FAST. I know most love it. not me. i dont like bleu cheese either...but give me the sharpest sharp cheddar you can find and i'm in heaven. different strokes...but i'd suggest if you are in a larger area you ask at your store's cheese counter if you could sample a small taste before spending the money on it. i made the mistake of paying $6 for some boursin..and threw it out. i disliked it. and then found out you can make it by using cream cheese and herbs...had i just tried that i wouldnt have wasted what to me is a lot of money.
most stores are happy to give you a sample...

First off, I have never tried Brie. I guess because it was too expensive plus I'm not sure what to do with it. But now I must get some. Maybe I'll luck out and find it on sale like Sadie.

Second, I just made the world's ugliest french toast, Lol. I guess Keto bread has a different consistency because it stuck to the pan even with butter. But it was pretty good. A different texture or something, but edible. I added a touch of cinnamon to the egg batter. Also, tried the Walden Farm's pancake syrup for the first time. Thumbs up! I wouldn't eat a lot of it but just a little adds a maple taste.

-JAMES-: thanks for the suggestions. Unfortunately, I’m not a big cheese eater. But I hope to get around to trying the waffles (I already bought the sugar free syrup). Is the vanilla cake recipe around? I just recently bought whisps – yet to taste them. I’m still juggling my foods around to hit my marks. I also bought dark chocolate baking chips but my husband is finishing them off at the moment – LOL!

KDGIRL: I am taking magnesium citrate – 2 a day (unfortunately they seems to have carbs in them – I’m currently looking for another brand that doesn’t have carbs). I’m thinking I should be more diligent about adding salt to the foods I’m eating.

UNIQDRGNFLY: not quite sure if the cramps are from eating keto or from my back. I have a pinched nerve and it has affected my leg – it’s just that recently it seems to be tightening up much worse than it did.

NIGHTSKYSTAR: guess I’ll have to add the cheesecake recipe to the pile I already have to make….. I did buy some pork rinds – have not even opened the bag – not thinking I will like them and also think the smell will really turn me off.

I agree with NIGHTSKYSTAR's comment on diuretics. Eating Keto is a natural diuretic. People who take extra salt take it to counteract that. I can't imagine taking anything, unless as she wrote, unless it is doctor's prescription drug, that is a diuretic.

for "venting" you wrote a wonderful post, I didn't know you were venting until you said so at the end of your note. By the way I found my animal allergies virtually cured since eating Keto. I visited a friend with two dogs yesterday, and I used to take allergy medication on the way to visiting them, but don't anymore. Played with the dogs yesterday evening, petted them, etc., no problems. Only this morning while waking up, rubbed my eyes, and my eyes started to itch. I was going to rub them more then I realized that I hadn't washed my hands before going to bed, and the dogs had been licking my hands.

Perhaps your seasonal allergies are actually better this year? I don't know, but if its better, then its like my experience with dogs and cats. Hope so.

Good Morning. I panicked when I didn't see the pretty deviled eggs this morning on my spark page. LOL Nice new picture James, looks delicious.

DRAGN- Magnesium Citrate for cramps.

Started Keto Feb 2018. All went well initially but have been dealing with my food allergies all along and now my seasonal allergies for awhile (September - October) which I think some of my food choices have made the allergy worse. So I have been taking meds/nasal spray etc feeling miserable and still trying to hang onto Keto WOE. Gained a few pounds, either from carbs or meds, or both.

I have been flip flopping with Keto for awhile (carbs too high) and I admit I was not doing well on Keto. This is where I usually throw in the towel and give up. Not this time- Giving up is not an option anymore!

Last Monday I made a drastic change in my Keto choices because I really want to stay with this WOE and I am hoping it will put me back on track and get rid of some of the problems from my food allergies.

I know what I need to do.....I just need to do it! For me keeping it simple is key.

Muscle cramps have always been my biggest problem with any LC diets and is the main reason I usually quit. But I have learned here that I need to take the max dosage for women which is 500 mg Magnesium Citrate throughout the day a few pills with each meal. Add salt to foods. Drink water with a 1/2 teaspoon pink salt each day and 2 cups salted broth.

SO my new KETO choices are NO foods with sugar in the ingredients (like ketchip)
NO dairy (cream or cheeses) at all except butter.

CALORIES 1800
TOTAL CARBS under 20 every day.
FATS 120 g
PROT 60 g

Now, I know I should know all this already but knowing and doing are two different things.
I guess feeling so sick has ignited a fire in me to success at this once and for all. I am turning away from people who want to bring me down because of my Keto WOE choice. I just wish I had the courage years to ago, when I was younger, to stand up to them and adapt to this lifestyle.

Sorry about the long post but I know what I should do because I learned it here from you. I am just feeling lousy and needed to just sound off.

What is great is that they give nutrition information for every product, but what is there is very hard to believe. For example the zero carb pizza crust:

The information for that one says 1/4 of a pizza crust has 14 grams of carbs, and all 14 are fibre. I've never seen that for any food. Sometimes the fibre fraction of the carbs is high, but I've never seen that all of the carbs are fibre. Psyllium husks are 100% fibre, but I don't think the crust is made with that.

Then things took a strange turn. The bagels:

yes magnesium, salt, and as always check with your medical professional if its beyond a little cramping.
i like the cheesecake. tastes JUST like "real" and i dont miss the crust at all. line the pan with parchment for easier storage and cleanup.

Keto is a natural diuretic, unless you are on a prescribed one you dont need anything else..and salt is necessary DUE to the diuretic that is the keto diet.

on "tasty" things. many suggest you dont do any sweet. for me that would have been keto suicide..but i found the farther i got into time on it the less i want sweet. now its a rare treat. i do the chocolate "mousse" (heavy cream, cream cheese and some cocoa powder) and find that i dont really need the sweetener in it...the cream makes it sweet enough for me. in the beginning i was using much more.

that said..another favorite when i was getting to the no sweet stage...i hate pork rinds. i think they smell like well..i wont say. but...drizzle a little butter on them, then shake them with a little cinnamon, cloves and swerve, and they taste a lot like churros. just watch the protein and how much spice you use. they both add up!

you asked about the tasty sort of things I was thinking of, here are some tasty things that come to mind:

- Brie cheese
- Camembert cheese
- Blue cheese
- protein powder waffles with butter and syrup for breakfast
- two protein powder waffles with butter in the middle, eaten like a sandwich (I sometimes take this with me on the road in a plastic food bag)
- one or two squares of dark (85% cocoa) chocolate (sometimes before bed)
- "WHISPS", parmesan cheese crisps, sort of like potato chips, only better
- sliced zucchini dipped in ranch dressing
- protein powder vanilla "cake" sliced with lots of butter on it

Marie congratulations on getting into the 100s!! That is a major accomplishment!!

IWANT I agree with DRAGONFLY. I never had muscle cramps until I started keto 6 months ago. I take a lot of magnesium. One to two pills with each meal. That also helps keep me regular. I do have salt pills, but I took them, they made me nauseous, and then I didn't take them and I felt no difference (except not nauseous). So I still have them if things go south (where did that expression come from anyway?) but I'm not currently taking them. I am very liberal with my salt usage on food though.

Holly I'm going to try the keto tiramisu recipe you sent me today. It's very time consuming so I haven't gotten around to it, but my birthday is coming up and if it's good - that's what I want!

Cheesecake would be great too, and I'm sure you could make an almond flour crust if you wanted the texture, but you're spending a lot of carbs on that.

October is my last push month before my birthday (60 in Nov) and then after my birthday, I'm going to have to figure out another goal to shoot for. Have a great day everyone!

Iwant...if your talking about muscle cramps, that has to do with electrolytes I believe. I take magnesium glycimate and pink salt to keep mine at bay.
But James or Holly can probably better answer this as I am fairly new at all this too, trying to sift through it all. Lol

Please don't be hesitant about asking questions because we all learn together. I for one appreciate your questions, doesn't bother me one bit. 😉

I wish I could find a natural diuretic besides lemons, perhaps a herb of some kind I could drink in some awesome Earl Grey tea or Chai tea.

Got another questions: I know people have talked about cramps before on this site and I have even said I use diet tonic water to control mine. However, I think I might be starting to have some problems that the tonic water is not helping. I say think because I do believe it has something to do with my back and has been there for a very long time. But it does seem lately that it is getting worse - do you think it could be from the keto diet or might it just be an escalation of my back problems?

MARIENOW,
I'm a fan of the expression "if it ain't broke don't fix it".

In terms of Keto and weight loss it means if you are eating Keto, and loosing weight, don't change anything to loose faster. Lets say cutting calories in order to loose faster, or whatever the change you introduce is. Don't introduce changes to what is working.

Marie...i save carbs where i can, so i just make cheesecake with no crust at all. There are lots of keto "graham cracker" crusts online, though. I kinda like it without!

UNIQDRGNFLY: Thank you! That's amazing how much you've lost. Wow! I would LOVE to be in the 80's too. That's my next goal. I can't wait! :) I'm feeling better now, thanks. I think I just need to keep doing what's working and not let other people put negative energy into my head. If I didn't feel well, I wouldn't stick with it. But I FEEL GREAT! In fact, today I went shopping and saw some Christmas stuff already. I bought a few things and tonight plan to rearrange my living room so I can put my tree up soon. I'm someone who doesn't normally get into the holidays. So I'm feeling good and happy. I just need to keep going. Besides, I realized the Dr and nurse might have been talking about patients without any fat reserves. I have PLENTY, so I'm fine. :)

I Want: Congrats! You're doing so great. Good luck Monday. That website looks good. I would love the pizza. Their pancakes have ricotta in them and I vaguely remember some recipe that was very popular years ago with Atkins people that involved ricotta crepes or pancakes. I'll have to look for it.

Rita: What about a cheesecake birthday cake? I bet bakeries could easily make a keto version from simple ingredients. The filling tastes just like the real thing. Maybe Holly knows something that could substitute for graham cracker crust? I've been having a few bites every night (it's so filling, I can't eat more.) It's good though!


Too bad about the pudding! I was literally almost out the door to get some, Lol. I looked at the packaging the other day and didn't get any because of the aspertame. I still have to try the homemade heavy cream and dash of cocoa idea.

BTW, speaking of diet drinks, is La Croix okay to have? I've been trying to substitute that instead of diet drinks like Diet Dr. Pepper and so on.

I had a delicious day of eating today highlighted by "surf and turf" (steak and shrimp). I had grilled sirloin, it was so good and tender. Luckily I do like fatty meats (like James mentioned before. In fact, James, you reminded me about prime rib! I LOVE that. I need to get a 2nd job to pay for all these meats, Ha!)

Super score at the store today. Brie cheese half off. I bought all 8 wheels. I love cheese as a dessert item. on the maltitol, I can tell you that I was very happy to find Stover's no sugar chocolates. Bought and ate a lot of them. I decided to do a blood sugar test on myself (which I sometimes do just because I can).

So took my blood sugar, ate a bunch of zero carb tasty chocolates, and after 30 minutes my blood sugar was crazy high. WHAT? Sugar alcohols hit my blood sugar the same as sugar. If it raises my blood sugar wouldn't that take me (or even a non-diabetic) out of ketosis ... yup, it sure would.

If it tastes too good to be true, it probably is too good to be true. That is why Keto versions of high carb things are not exactly the same, at least I don't think they are. But for me that is OK. I do have plenty of very tasty things.

Subject: new team picture

I changed the team picture. I had some horrible technical problems of getting the picture off my camera. A few software updates changed a bunch of settings on both my phone (which took the pictures) and my computer. But I didn't give up!

Devilled eggs are certainly Keto, but the team picture lacked some colour.

Marie...i totally understand your thoughts. I am bipolar and I get really overwhelmed with different things. I live to keep things simple.

Today I bought some rib eyes that were on sale and some chicken thighs, which I love both. I am not a huge veggie eater, so i will have a small salad with each. I do like tomatoes though. I also have ibs-d and carbs really mess with that.

I am very proud of your weight loss! I know that feeling. At present I am trying to get into the 180's. My ultimate goal is between 150 and 160. I will get there and at my age, 65, i know it will be slower than if i were younger.

Rita i wouldnt use the ogliosaccharides. in the baked goods i sell that are keto, i use erythritol or lakanto (natural sweeteners) and thats it.
i have ingredient lists available to anyone who wants them...if the place making them is a licensed bakery, there should be no problem with you asking ingredients.

iwant..i hate...HATE to rain on your parade. but instant pudding has cornstarch...not keto. unless you have found some new kind of keto brand?

Thank you everyone for the support and congratulations this week. I have started talking to a few friends about Keto and how much I love it. I am glad I like most of the keto foods I eat, or can combine them with other things to make them palatable. (mashed cauliflower=ick, mashed cauliflower with sharp cheddar=Yum) I grew up on heavy hearty food and I am pretty much eating my favorite foods from my youth. Marbled steak and roasts, bacon, and cream are the stuff they eat in Nirvana, right?

I've been letting my carb intake creep up a little and I'm getting that back under control. One day I went as high as 48g. Now I'm keeping it below 25 and working on getting my daily consumption below 20 again. I need to have a whole week where I'm below 20 and see how I feel, I am suspecting that I may feel better at around 25, but want to do the experiment. Besides If I do it for a week solid, it will be easier to stay there long term.

My birthday is coming up and I was looking around the area for a bakery with some keto friendly options. One that is a stand alone local company doesn't list ingredients for their "keto" cakes. Some of the treats in their "keto" section contain maltitol, which is a complete no-go for me. The other, which is a local chain, uses erythritol and oligosaccharides. I had to look up oligosaccharides, they don't sound like they're safe for keto. Any feedback from you, Holly? I thought as a baker, you may know more about that ingredient. I think, instead of a cake I'd rather have a cupcake, so it isn't going to hang around the house for days.

I've always been one to look things up if I run across something that I don't know anything about. That's why people call me a know-it-all. :)

OK - today I made sugar free fat free instant chocolate pudding with heavy cream. It's in the fridge setting now, but I did lick the spoon - it tasted delicious!!!

Still haven't tried any recipes yet (James, you know how I put things off - remember how long I talked about keto before your "push" finally got me on track), but hope to in the near future. Those fat bombs look pretty interesting to me. Plus I saw a recipe with cabbage and chop meat (I think it was on the "Diet Doctor's" website, that I really want to try.

I also tried some food from a site called "keto fridge." The food is expensive, but I am enjoying what I've tried so far (pizza, crab cakes, zucchini pancake)...... Still have some I didn't make yet......

BABYSTEPS2015: good to see you back on the boards. Sorry to hear about the stressful visit with your family. In a way I can relate. Whenever I have to do things that involve my daughter-in-law (she took an instant dislike to me), I too stress the week before and then when the day finally comes – I take it out on food. I have to say, I have gotten much better about this and I believe you will conquer it also. Having snacks that you can have on keto is a very good step toward that goal.

-JAMES-: Very nice breakdown of chicken. Moving forward, I think chicken is off my menu. I like beef better anyway. Not to mention, I am become super fond of zewigle hot dogs…….

Thanks for the compliment on my weight loss. I am very happy with how things are coming along….of course, there is a nagging thought in the back of my head that the weight loss is over but I know that’s not true. I’ve lost 16 lbs in 4 weeks (I’m just about at the end of my 5th week)…….

you are so right, weight issues come from long term eating habits.

One off plan meal, or day, or weekend certainly isn't going to cause major problems. A delay in weight loss, certainly. But the problem is throwing in the towel mentally. "I ate this, I might as well eat that ..." and bargaining with yourself, promising that in the future (tomorrow, after the weekend, after the vacation, after the summer, ...) you'll get back on track.

Congrats to everyone for doing so well, especially people who got off track and got back on again so quickly. Years ago, I remember going to a weight loss group at UCLA monitored by doctors. I ended up not doing it because it involved a liquid fast and was something like $600 per month, but I learned a lot. One thing is that weight issues don't come from having a "cheat" day or overeating on vacation. Weight problems come from the person's inability to get back on track after overeating. It's a snowball effect. Some people get derailed for weeks, months and years. So congrats to everyone who got back on track so quickly. That's proof of real change on your life!

Happy weekend everyone! Today is 4 weeks since I've been on my plan. I was talking to a doctor and posting with a nurse, and long story short, they worried me. I know you all can guess what they said. I was restless and couldn't sleep last night. I started getting paranoid. I don't know why people's opinions affect me so much. I guess because this is all new to me and I'm still on a learning curve. I decided maybe I need to change my plan to a more traditional WOE.

Then of course I weighed myself this morning and I broke the 200 mark at 199.7. I'M SO EXCITED! (I know I shouldn't care about the scale but I'm SO HAPPY to be in the 1990's, just barely but I'm there. Lol)

So I started my weekend being indecisive. Ugh! At least I have some shrimp to look forward today. I've been drooling at shrimp pics lately so I need to satisfy my craving today. So funny because I normally don't even eat shrimp, but some dishes look so good! My mouth is watering looking at some of these pics.

UNIQ your husband and mine. Sigh. But mine drinks Diet Coke and regular Hawaiian Punch. I am hoping he will see me finally gain control of my weight, and want to do the same. I'm still 20 or so pounds away, but he knows I don't eat non-keto anymore, so he's used to it. He never tries to tempt me with the cookies, rice, bread, whatever he eats.

I eat a lot of chicken thighs. They have them here for 99 cents a pound, and wrap extra skin on the bottom (I'm sure to raise the weight) which is GREAT for me!!

I make 5 lbs. of chicken thighs every week. And have no problem getting through it all. If I don't, I cut it up with celery and mayo and make chicken salad.

KD...like you I give up telling people about keto because most are so set in their ways about their own woe, they do not like change, regardless. My husband is type 2 diabetic, and I can't even convince him...his dr is for the Mediterranean diet. And he refuses to totally give up diet dr. Pepper. So, he is an adult and you can't lead a horse to water if it refuses to drink. And he detests change.

James/Holly...is their a difference between block cream cheese and whipped cream cheese?

Also, how do you get your fats in without going over protein? I have no problem with very low carb, its the other two that gets me.

Subject: eating chicken

Eating chicken is OK, but its typically not very high in fat. That is why when we talk about eating chicken we say eat the skin, because there is a little more fat there. Number follow ... (I'm a numbers guy).

One is aiming for daily numbers like these:
carbs (25 grams or fewer)
protein (about 50 grams)
fat (150 grams or more)

What does chicken have. It depends on what parts you eat:

100 grams of white chicken meat:
carbs (0 grams)
protein (31 grams)
fat (3.6 grams)


100 grams of dark chicken meat:
carbs (0 grams)
protein (23.2 grams)
fat (8.7 grams)

100 grams of chicken leg with skin
carbs (0 grams)
protein (25.1 grams)
fat (15.5 grams)

So they all have no carbs (GREAT!), but the leg with skin has the most fat, so you want to head in that direction, and if not that the dark meat, and if not that the white meat. I often eat my chicken in fatty salad dressing, like ranch, as that ups the fat.

I'm going to echo what Holly and Karen wrote. They've already said it, but just so you know that you have yet more support I'll more or less repeat the ideas.

I bet in the past when you over ate on carbs you didn't feel as bad as you did after the carb load last weekend. What that means is that your body really changed eating Keto.

As Holly wrote, the 5 pounds up is mostly water. Getting back on the Keto horse means you will loose it in about 3 days. You know what to do, and you know it works, and that is so much better, I mean SO much better than feeling at the mercy of not knowing what to do.

IWANT it's true - you have to use ketomojo strips on the ketomojo meter. And I tried some extra blood glucose strips (left over from when my husband tested) and they didn't fit for bg readings either. But bg strips are not expensive, and the ketone strips definitely are.

Amber I feel you. Having company is very hard on the diet. It's stress whether you get along with them well or not. I gained 15 pounds the 8 months my sister was living with us in 2017. Lots of wine drinking going on to keep my sane, which did not end up boding well for me food decisions either.



But you can definitely do it!! By the way, I just quit telling people about keto that are really interested in health. I just say no sugar no starch. And when they ask why, I tell them that carbs are not good for my body. MY body - and what can anyone else say about that? I'm not telling them not to eat carbs...

Hey all!

Been MIA for the last week because it hasn't been a good week and I didn't want to bombard this group with stressed-out texts lol

Between last Thursday and Friday, I saved up enough of my NCs because I was having a couple girlfriends over and I had wanted to have a low-sugar sangria. I only had one, was really proud of myself.

But then, we had my dad's family on Sunday and everything derailed. The stress of them begins at least a week before and really ramps up the day before. I managed to keep it in check on Saturday, but Sunday???? Sunday was a total wash. I carbed it up. And Monday. And Tuesday (a little less). And Wednesday. A little less each day right up until last night. Can I just say though, that I had an incredible migraine for 4 days (Sun-Weds) from the massive influx of carbs/sugars - definitely not even close to worth it.

My parents are fully aware that I'm keto. My dad just thinks I'm "low-carb" because trying to explain keto to him was like - I don't even know. I'll let you guys come up with your own analogies lol. The nice thing is, they're both completely supportive. I had a long chat with my mum about the stress and diving into the big, carby pool. She's going to help make sure that I have keto-friendly, low carb "treats" in the pantry so that at the end of October when we have them again, I have stuff that I can feel like I'm eating an entire XL, deep-dish, extra cheese and pepperoni pizza and not knock myself out of ketosis.

I was doing so well. Was down 15lbs since restarting keto and gained back 5 after that weekend.

Today, I'm back on my first full day of keto. Breakfast of 2 eggs in avocado oil, coffee and 2/3tbsp MCT was delish..... because I didn't have to make it. My dad made it for me, which I thought was really sweet. I think meals always taste better when you don't have to make them yourself!

Tried to catch up with some of the thread.

I use a Precision Freestyle Neo to check my blood ketones. My last batch of strips seems to be defective. I keep getting an error message, but I only bought them a few days ago from the drugstore and the expiration date isn't until next year. I bleed like a mad woman so I know there's enough blood. (Blood donor clinic times how long it takes to get the pint outta ya and the last time I went, it took less than 7 minutes.) Gonna try again tomorrow morning and contact the manufacturer if I still get an error message.

I'm a giant fragmented thought today and I apologize if this post was too much or all over the place. I'm looking forward to being more involved in the group!

MICHIGANLORI: you know I wasn’t happy with the roasted chicken either. First of all, I did get that much (had to limit my portion because of my protein limit for day) and really didn’t think it was worth what it cost me in protein. Will stick to my hot dogs and steak (and a burger here and there)…..

Ah, Holly – that is most probably why the roasted chicken didn’t work. I bought it too thinking it would be a very quick few meals.

Lori...i'm betting because that chicken had sugar. they inject them, and put it in the coating on them. why i dont know..i thought i was doing a good thing getting it...quick and easy..and i got really hungry, which NEVER happens..so..i asked. and they got the packaging for me..and sure enough..loaded with sugar!! hope thats not the case with yours...but might want to check it out

Yesterday I realized that chicken is not the best for me. For the first time I was hungry after eating rotisserie chicken (w/skin). I could have ate that whole darn bird. This morning I had to have a snack to get me to lunch. Feeling much better after my lettuce wrapped burger this evening.

IWANT that is true. You can get a ketomojo and you can check ketones and he can check blood glucose. Very very easy. I ordered off of Amazon. 2 day prime service. But I think it's available off the internet as well from the company.

Holly and James are awesome. They are supportive, but educational and even if you don't have the right answer, they teach you in a kind way.

KDGIRL: So if my husband has a blood meter for diabetes, I can just buy keto strips and use the same meter?

Congrats on zipping up those shorts……even though you didn’t lose weight, you did lose inches. I hear this is what happens. I’m personally hoping I get to lose a lot more weight (I have quite a way to go) before I go to just inches.

UNIQDRGNFLY: I like to look at the facebook groups once in awhile, but agree they mostly have a bunch of garbage to say. Plus I just get bored spending that much time scrolling thru facebook.

I agree ….. James and Holly are the best and have all the current and correct info for the keto WOE. I’d probably still be on the fence about starting if it wasn’t for James giving me that “push.”

recipes..some are in the recipe thread, others i've just posted when someone asked...probly shouldnt.

My win for the day...i had a cannoli order. they are one of my favorite desserts. order was for 12. recipe makes 24. everything is boxed, and the extras are going home with my stepdad tomorrow for his september goodie box (thats what he gets for Christmas every year, 12 months of goodies. i've never once duplicated since 1990. its been mostly cookies, but now i'm running out of kinds so hes getting other things..like cannolis..LOL!)

... as for my pancake/waffle recipe. Dangerous? Maybe. But practically zero carbs, like 1/4 of a gram of carbs per pancake. I live that danger most mornings, and survive.

Subject: Exchanging waffles for pickled vegetables

My wife and I have friends, they are younger than us and recent immigrants from Armenia, and the effective acknowledged relationship is that we are more like parents, and they are missing family connections since they have no relatives here.

She is taking her driving test on Saturday, and every morning this week we've been driving for a few hours. With her class of license she needs someone with a full license in the car.

I gave her some protein powder waffles on Tuesday. Her husband, who was low carb but has switched to Keto ate most of them, which I found out on Wednesday. I have no influence on him going Keto. I did on the low carb, just introducing them to the basic ideas that carbs themselves have no nutrition, just pure calories. She herself has issues with wheat, not exactly celiac disease, but close. So the waffles are wheat free and great for both of them.

So I made some more waffles yesterday, and in when I presented her with more waffles she gave me some picked Armenian vegetables. I've had them at their place before. Its a win-win.

Well. I thought I'd missed out on Team Keto for a few days, but since I hadn't gotten an email I didn't check. Today I checked since I had time at work (no patients but I have to be here anyway) and WHAT? I missed all of September!!

Welcome to all the new people. I can see you 've had a lot of questions answered and there are no answers that I could see that were missed.

There was one question about the keto meter. I have a keto mojo. I use it about 4-5 times a week. I like it a lot. The meter was about $30, and the strips are about $1 each. But that is compliance money if you ask me. It also measures blood glucose, and the strips for 100 are about $18.

This month has been a wash for me weight wise. No loss, but no gain. However, I have a pair of size 6 shorts I've been trying on intermittently that now ZIP!! Too tight to wear out in public, but six months ago they didn't even close by at least 6 inches.

I've had a boarder living with us for the past 2 months. I took her out to find an apartment, and she moves out the middle of October. That'll help for sure. It's stressful to have someone else living at your house.

I've tried a lot of new keto recipes. I made "egg roll in a bowl" last night and it was great. Veggies, oil, hamburger (or pork) meat and siracha mayo on top. I would do it again, but chop the cabbage instead of shred it. Hubby liked it too, his with rice underneath.

I started doing a 6 am boot camp (fit body boot camp) and am so sore. But it's challenging and I can see that my fitness level has been sorely lacking. I feel so good when I'm done.

I've copied and pasted all the recipes people have mentioned this month, and have some great new ones to try out!

Holly congrats on your keto class. I knew it'd be a success.

James I tried your pancakes again. I made two recipes, and the second day, I could not wait to get home from work to eat the rest of them. They are sort of dangerous!!

If we get one more inch of rain here in San Antonio, we will have exceeded the ALL TIME rainfall record for a single month. We've already taken the September record. And it's only the 28th. Plenty of time for that - and rain in the forecast.

i like the keto bread....but it doesnt have that yeasty taste i like..i do have a recipe for a yeast keto bread, but it needs all kinds of expensive ingredients i dont have.
i like steak and beef and all.but i want potatos WITH it.
what i dont like is fat. and everything keto is fat. i think thats where i run into trouble. and i love casseroles..one of my favorite being a cheese, steak, and guinness pie with a puff pastry crust..and i love casseroles with egg noodles. and i cant find anything to come close. i think its the time of year for me..its cold out..which i love..and i love all the heavy, rich food i associate with fall and winter. and its all a no now. so i stick with the plain, fatty stuff, and do my best to ignore the stuff i want.

I like Keto food. I like steak, I especially like fatty cuts, like prime rib. I didn't used to like veggies of any kind, but my taste preferences changed after a few months. Salads, raw cauliflower and ranch dressing ...

NIGHTSKYSTAR: I wouldn’t say I don’t like the keto food (although I am getting a bit bored and sometimes even want more to eat). Eggs and bacon are great. Steak is great. But I am missing bread once in awhile. The keto bread just doesn’t have any taste. Like you I miss fruit – I was a big fruit eater. I was doing WW and as you mentioned before in a post, fruit was free.

Just went to the link and saw your roly poly recipe. I bet it tasted delicious. I see what you mean – they did use your “fat” picture………

i've made all those Teresa..they just dont thrill me. i want beans in my chili. potatos. corn and most of all fruit. i love heavy, carby things,.which was why i was so heavy. the fakes are ok...but way too many carbs for me..i try to stay under 10 total not net a day. if i get up to 20 i'm fine with it..but i try.
the way i try to look at it is i ate what i wanted for 50 some years..now i have to pay for that..and if it means not enjoying what i eat so be it.
for me, food was comfort. i was always cooking or baking something. working with the magazine i do, one of the requirements is rating recipes people send in, and making up new recipes. they get lots of keto stuff from me..
the hardest, though..last year they called and asked me to make up a recipe for their big thanksgiving issue, and they would feature it (it was supposed to be on the cover but the editor got overruled and they had the usual turkey instead) i worked weeks to get the recipe right...my poor neighbors probably never want to see a roly poly ever again. everyone agreed it was perfect, and i've never ever been able to even try it!!

NightSkyStar, so sorry you don't enjoy the food. That's my goal to find delicious keto recipes so I enjoy what I am eating. I made a keto cheesecake for my birthday, so delicious. I then made biscuits and gravy for Saturday morning breakfast. A favorite of mine and it really tasted good. I then got to eat them for another 5 days. One a day, they weren't overloaded with gravy like I used to, but really good. I'm going to play with the recipe adding bone broth to bulk up the liquid with fewer calories/macros. I found a recipe for bagels and will try those out this weekend. Plus going to add the fathead pizza dough and make pizza for us. I love experimenting with recipes. I'm just trying to understand how to get in all the good veggie carbs without going over the total carb limit.

I just go by what is in Wikipedia. My first reference:

I take that to include fibre as well, as fibre is a type of carbohydrate. So I don't aim to get any fibre in, I just get in what I get in, I don't think about it.

I do typically eat about 25 grams of carbs a day, but I'm a guy, so its a little higher than for women. That number is total carbs, not discounted in any way for fibre, and my fibre is so low that it wouldn't let me squeeze in many more grams of carbs anyway, not worth the calculations.

So what about protein and fat? I put my sex, height, ... into a chart and look up my ideal weight, not my current weight, my ideal target weight. It is about 160 pounds and divide by 2.2 about 73 kilograms, and you can find your ideal weight.

where it says 0.8 grams of protein per day for each kilogram of body weight, and 73 times 0.8 is 58 grams. Women's ideal weight tends to be less, so it usually works out to about 50 grams of protein a day for women.

There is a minimum amount of fat, at 78 grams a day, but to get to 1800 calories one probably needs to eat about 150 grams of fat a day.

There you have it, how I figure out my target macros. Why do I eat carbs at all? Because I need things like vitamin C, and I can't get vitamin C without a few carbs at the same time. I think of carbs a leaking in, allowable to get the things I really need.

i dont use a calculator. i just go by the accepted under 20 g total carbs, under 60 g protein and the rest from fat but at least 120 grams. i dont count calories.
works for me.

fasting is a personal choice. its not better to do it, or better not to, its just a personal choice. you are essentially fasting when you stop eating for the day, until you wake up in the morning. ANY fast is essentially broken then, as your insulin spikes just by waking up, technically ending any fast.
i'm sure an expert can explain that one better than me...if you google it theres lots of info on it!!

I remember Wheat Belly from years back when it first was made public, that is one reason I would never take statins.

Lori..last night at the keto class i taught, we actually discussed just that. I told all the people that i rarely tell anyone i do keto. when offered food i dont say no i cant have that..i say no thanks i'm not hungry. when someone sees me eating a burger without a bun and asks about why, i say oh, i'm just trying to eat less carbs. I explain NOTHING, because i got so sick of people telling me i was going to kill myself with keto.
its way easier just to not say anything. and, really, would they be saying..why are you having ice cream, or..why are you eating bread? no. they wouldnt...so its really annoying to me when they want to know why i am not eating something!

"There's actually a powerful relationship between carbohydrates and cholesterol."

"Reduce carbohydrates and VLDL and triglycerides drop, often dramatically."

I don't know why Wanda's body reacts differently to carbohydrates as related to thyroid function and to cholesterol. I myself have low thyroid function and take synthroid, and my experience is that it is very stable over the last 7 years.

UNIQDRGNFLY I have been going to WW just for the Scale Accountability. But I'm following a different diet that is allowing me more fruits and whole grains. I'm sure my body has reacted just like it does with sugar (bloating and edema) as it grows accustomed to the new WOE. Keto is much easier and I was never hungry, but doctor orders due to thyroid and cholesterol changes. *sigh*

Wow! I have great news.

I have mentioned several times that I was waiting for this month's Dr appointment so I could see my cholesterol numbers after several months on Keto.

Total Cholesterol: 154
Previous reading: 182
Highest that I can remember: 240
All cholesterol numbers down, triglycerides down too

I am taking Crestor to lower my cholesterol so if I keep this up, hopefully there will be one less prescription to deal with.

Fasting Glucose 81 Yea!!

All numbers just where they should be including potassium.

If I had any doubts about the wisdom of Keto, it is gone! This WOE agrees with my body chemistry better than I could ever imagine.

Everyone is a little different, but I think accidental intermittent fasting (which just means the times of day when you eat is in a smaller section of the day) is a sign that one is in fat burning mode.

it will be 2 years on october 29th. and no. i dont like the food. never have..i just dont have a choice if i want to live longer. i lost all but 20 pounds on keto.

i wouldnt be sad if i never had to eat another piece of bacon ever..LOL

Holly, I didn't realize you don't like keto food that much. That almost makes me feel relieved, because that's my problem and one reason I've been hesitant to go "full" force. I don't like the food. So I'm afraid I would end up eating nothing. The times when I was close to 20 grams, I really almost felt nauseous and didn't want to eat at all. That's great you've found a way to make it work for you despite not necessarily liking the food. Owning a bakery would be extremely hard for me!! Congrats on doing it!

You've lost so much weight. Was that all lost from doing Keto? I think you said you've been doing it for 2 years, right?

Are any of you doing intermittent fasting?

I realized I'm doing this by accident. I have my last food about 7 or 8pm and then don't eat again until the next day at about 1 or 2pm. I can't get up early enough for breakfast and I work through lunch so I can leave early.

Is this bad?

Sometimes I bring almonds in my purse in case I need a little something.

Marie the reason we dont encourage the strips is because when you are in full ketosis, you no longer are spilling the ketones into your urine you are burning them, so people think they are doing something wrong and its not "working". that said theres no problem at all with using them, its just that they are expensive, and if they arent going to show anything, its a waste of money as well as not working for what people want them to.
For you, they work as intended. and i'm all for anything thats motivating!

i was a foodie. food is my profession. i own a bakery, i'm a professional pastry chef as well as holding a catering license. i'm a field editor for the largest food magazine in the world. it kills me that i cant enjoy food any more (its no secret that i dont much like keto food). i had to change my whole way of thinking from "food is fun, enjoyable, satisfying, delicious" to"food is fuel and thats it". its really hard for me, but its the only way i can deal with it. I had to pick my health or something that tastes good in my mouth for a few minutes. fortunately, thats not the case for most people. wish i could still enjoy it like you!
