If you count net carbs I think you should count them ONLY when it's a real food product. Like an avocado. If it comes in a box or bowl or bag - count full carbs.

Your body doesn't count anything. It doesn't care if you count more or less carbs - it just processes them as it needs to. The only one you cheat by counting net carbs is yourself.

Oh ... just when I was hoping for low carb ice cream ...

I did some googling to find this page on Rebel Ice Cream:

5.6 "net" grams of carbs per pint. The math gets a little "fuzzy" but it is close enough to know what is going on with the nutrition information.

That web page also shows from the "Nutrition Facts" box that 2 cups (a pint) would have 44 grams of carbs (four times the 11) and of the 44 12 would be fibre and 28 would be sugar alcohol.

So if you don't count fibre, or sugar alcohol, then 44 - 12 - 28 = 4 pretty much the 6 they are promising on the container. However, I can tell you as a diabetic that I've done "experiments" on myself, and sugar alcohol does raise my blood sugar just the same as sugar does.

Fibre is a touchy area, and I'm wary of that. So all in all, not the 6 grams you think it is, but probably more like 40. Even 1/2 a small tub won't fit into a Keto day, and probably not 1/4 of a small tub either.

Sad but true.

erythritol doesnt effect me, either. but again for me its a treat. thing is, its natural....just crystallized stevia. they have to call it processed because they have done SOMETHING to it..but its like dehydration. no additives or anything. i'm fine with the natural sweeteners like that or monkfruit. (which uses erythritol in combo with the monkfruit) not ok with the others like splenda etc.

Holly for flavorings are you talking extract or SF flavorings?

MJLUV I hear you on sweeteners. I use erythritol and it doesn't affect my ketones or blood glucose at all. I seldom use that either, but a little when I'm making BBQ sauce or cole slaw.

Still, once in awhile.... Quality of life is important too.

The half of avocado and bacon and egg bake peaked my interest in todays Spark start page. I will have to try that one!
Not trusting Swerve at this point. You have seen what they have found out about Splenda and Sweet and low substitutes. Will stick with Sweet Leaf.
One thing I have learned with this lifestyle choice, is that desserts are not an option. Even sugar free ones. That's what got me sick (diabetes 2) in the first place. If any type of sweet needed, I stick to berries and cream. But seldom. And being with Keto, and LCHF as long as I have, cravings are over.

Getting and staying healthy is not an option, it's a lifestyle.

KD i just mix heavy cream and swerve until it tastes right. sometimes mix in some cream cheese. a spoon of vodka to keep it soft (if you dont have animals use xylitol that doesnt harden like the stevia products do)
add flavoring. i have a caramel one. add cocoa for chocolate. butter flavoring. vanills. peppermint. whatever you like. pop it in a container in the freezer and stir it every 15 nmins for a couple hours if you want it creamier, or just dont.
i dont have much at a time. its rich..but its cold, and creamy, and gives me the mouth feel of ice cream. I often make rhubarb ice cream..so i have that fruity rhubarb taste that i crave so badly.

Holly have you posted an ice cream recipe in the recipe section? That might be good for summer!! And we are currently without A/C (we have a two story house - the upstairs has A/C but our bedroom/bathroom, kitchen and living rooms are all downstairs) so that sounds so good to me right now!

Personally I stay away from the convenience stuff. so easy to make your own and KNOW whats in it.
ice cream is incredibly easy to make. i was given a coupon at my grocer for a free pint of halotop when it was the newest fad. on top of tasting horrible..the carb count was ridiculous. you could have maybe a spoonful..and i ended up throwing it out.
the woman who owns All Day I dream About Food is raving about the swerve mixes, but they are one of her sponsers. I'm sure they are good...but for me they are a no.

I just saw the Sweve now has baking mixes, cake, cookies, and waffles. Are they really no/low carb? Also, I saw on another forum about Rebel Ice Cream. Does anyone have any imput on these products.
